GRILLED CHEESE APPETIZER SANDWICHES
Making grilled cheese for a crowd is easy with four ingredients, including cocktail rye bread. Have them ready in less than 30 minutes!

Steps:
- Set oven control to broil. Place butter in small microwavable bowl; cover with microwavable paper towel. Microwave on High 30 to 50 seconds or until melted. Brush butter on 1 side of each bread slice.
- On ungreased cookie sheet, place 12 bread slices, buttered sides down. Top each with 1 slice Cheddar cheese and 1 quarter-slice American cheese. Add remaining bread slices, buttered sides up.
- Broil with tops 4 to 6 inches from heat 2 minutes. Turn sandwiches over. Broil about 1 minute longer or until golden brown and cheese is melted.

GRILLED HALLOUMI CHEESE
Steps:
- Brush the cheese with olive oil and place onto a medium hot grill for 2 minutes on each side, or until marked. Remove and slice into 1/2-inch pieces. Sprinkle with oregano. Drizzle the olive oil on top and squeeze the lemon juice over the cheese. Serve with grilled pita bread.

Steps:
- Cut rounds of bread, about 1/4" and toast lightly, on one side, under the broiler.
- Mix the three ingredients and spread untoasted side of bread with the mixture.
- Garnish with slices of black olives, if desired.
- Broil until browned, but watch careully.
- Allow to cool a bit before trying to eat the rounds!

BROILED CHEESE TOAST
Growing up, it seemed my parents would be quite creative when preparing weekend breakfast. We always had plenty on the table, even when we had to scrimp to make ends meet. When we did not have a loaf of bread, my mom would use leftover hamburger or hot dog rolls, or whatever she was able to find which would toast under the broiler. Along with our favorite weekend broiled cinnamon toast, we often would have this along with our bacon, eggs and grits. Broiled Cheese toast is a favorite childhood memory for me. I hope your family will enjoy it too!

- Spread with your desired amount of butter.
- Place cheese on top of butter.
- Sprinkle with sugar.
