Steps:
- Sprinkle salmon filets evenly with salt and pepper.
- Place filets, lemon rind, 1 tbls. lemon juice, 1 tbls. oil, and 1 teaspoons rosemary in a large zip-top freezer bag. Seal and turn to coat. Chill 30 minutes.
- Remove filets from marinade, discarding marinade. Place filets, skin side down on a rack coated with cooking spray in an aluminum foil lined broiler pan.
- Broil fish 5 1/2 inches from heat 10 to 12 minutes or until filets flake with a fork.
- Arrange rice and arugula on a serving platter;top with filets.
- Whisk together remaining 2 tbls. lemon juice and 1 tbls. oil; drizzle evenly over filets.

I love salmon. Oftentimes it's so smothered in things. I wanted to make a broiled recipe that let the salmon shine on its own.

- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Rub salmon down in olive oil. Cut your lemon in half and set 1 half off to the side. Cut the other half into 1/4-inch thick slices. Lay them on a broiler pan and lay the salmon on top of them. You just need enough to cover the bottom of the salmon so it's not touching the pan. Sprinkle with dill, garlic powder, salt, and pepper. Lightly squeeze the remainder of the lemon over the whole salmon; not too much, you don't want your seasoning to run off.
- Cook in the center of the preheated oven on a low broil until easily flaked with a fork but still juicy, 15 to 20 minutes.

- Heat and brush a grill with the 1 - 2 tablespoons oil.
- Grill the fillets, skin-side up, for 4 minutes on each side.
- In a small bowl, mix together the 1/2 cup oil, lemon juice, lime juice, herbs, salt, and pepper. Set aside.
- Preheat oven to 350°F
- Remove the grilled fillets and place in a large shallow baking pan.
- Brush the fillets with the reserved sauce and bake for 3 - 4 minutes, or until the fillets flake easily with a fork.

- Position one oven rack 6 inches from the broiler heat source then heat the broiler. Season the salmon fillets all over with ½ teaspoon salt and a couple of grinds of pepper and place them on an aluminum foil-lined sheet pan, skin side down.
- In a small bowl, whisk the oil and mustard until well mixed. Brush the tops and sides of the salmon with this mustard mixture.
- Broil until the salmon is opaque with a deep brown crust, about 6 to 8 minutes for medium-rare. (The center of the fillets will be dark pink, if you pierce one with a paring knife and take a look.) If your fillets are thinner, reduce cooking time by 1 to 2 minutes. If you prefer more well-done fish, add 1 or 2 minutes to the cooking time.
- Squeeze a lemon wedge all over the cooked salmon fillets, then serve salmon with more lemon wedges on the side.
