PUMPERNICKEL CARAWAY BREAD

- In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

BRIE OR CAMEMBERT IN PUFF PASTRY
This is a really yummy, easy appetiser. Looks impressive too! Cooking time doesn't include 20-30 mins setting time. Serves 4 as part of a larger cheese platter, or selection of appetisers.

Steps:
- Place brie on the pastry, draw a circle round it with a knife (about 1/2 inch larger than the cheese) and cut out the circle.
- Do the same again.
- Cut a strip of pastry about 1/2" wide that's long enough to wrap around the brie.
- Place the brie on one circle of pastry and tuck the sides up, place another circle on top of the brie and tuck the sides down, then wrap the pastry strip round it to tidy it all up.
- You can press the edges down with a fork if you want it to look REALLY neat, then decorate it with pastry scraps cut into nice shapes.
- Brush it over with a beaten egg so it will have a nice glaze when cooked.
- Bake at 180 degrees for around 20-25 minutes.
- Let it settle for around 20-30 mins then cut into thin wedges and serve.
CAMEMBERT CROWNED WITH CRANBERRY-PORT SAUCE
The holidays mean cranberry season, and here the cheerful and tart berries make an appearance atop sultry melted Camembert cheese.

Steps:
- In glass measuring cup, combine water and gelatin; let stand 5 minutes.
- In small saucepan, combine cranberries, sugar, wine, gelatin mixture and cinnamon stick. Bring to a boil. Reduce heat to low; simmer 2 to 3 minutes or until cranberries are tender. Remove from heat. Stir in orange peel. Cool 10 minutes.
- Remove cinnamon stick; pour into small serving bowl. Cover; refrigerate at least 1 hour or overnight.
- To serve, heat oven to 350°F. Place cheese on ungreased cookie sheet. Bake at 350°F. for 15 to 20 minutes or until thoroughly heated but not melted. Place cheese on serving plate. Spoon cranberry mixture around and on top of warm cheese. Serve with crisp crackers.
