CAMPFIRE S'MORES IN A CONE

These s'mores are neater and easier to make than traditional s'mores. We love making them while camping or sitting around the fire pit. The quantity can easily be adjusted to suit your needs.

Campfire S'mores in a Cone image

Steps:

  • Place about 1 teaspoon chocolate chips into an ice cream cone, followed by a layer of mini marshmallows. Continue layering chips and marshmallows into the cone until full. Repeat with remaining chips, marshmallows, and cones.
  • Wrap each cone tightly in aluminum foil.
  • Heat the foil-wrapped cones in a campfire until chocolate and marshmallows are melted, 3 to 5 minutes.

OVEN S'MORES

No Campfire? No problem! Ooey gooey marshmallow, chocolate, and graham crackers broiled to perfection and layered into traditional S'mores. I am ashamed to admit, I almost prefer these in taste (although not in ambience!). This is also great for making quite a few at once.

Oven S'mores image

Steps:

  • Turn on the oven broiler to preheat a little, and place the rack at its highest position.
  • Place graham cracker squares on a cookie sheet in single layer.
  • Top half of the graham cracker squares with 2 squares of milk chocolate each.
  • Top each of the remaining graham cracker squares with 2 halves of a marshmallow, sticky side down.
  • Broil, watching carefully (Don't take your eyes off them!), until marshmallows are toasted and golden to dark brown.
  • Remove from oven and assemble by turning the marshmallow-topped graham crackers over onto the chocolate-topped graham crackers and smooshing them down a bit.

CAMPFIRE S'MORES (AKA ROBINSON CRUSOES)

If you like regular S'mores, you're going to LOVE these! Start with chocolate graham crackers, smear on some creamy peanut butter, add the chocolate candy pieces, the melty marshmallow; then top with the other square of graham cracker. THE TRICK to making these perfectly is being patient while the marshmallow is roasting....don't stick it into the fire, twirl it slowly over the warmth, so that it starts to swell up. That's your signal that the inside is getting all soft and smooshy--just right for perfect s'mores. I first made these back in the early 90's when taking 10 girls on a church youth camp-out in eastern Washington State. We cooked all our meals over the open-fire (no campstove!!) including chocolate chip pancakes MADE FROM SCRATCH, pioneer hotdogs (yum, yum!) and caramel apples roasted in the coals. I guess I need to post those recipes too. After all...it's summer-time and people are camping!!!

Campfire S'mores (Aka Robinson Crusoes) image

Steps:

  • Break cracker in half (the short way); set one aside for the top.
  • Spread peanut butter on one cracker, set the candy piece on that and press gently.
  • Roast the marshmallow over the WARMTH of a campfire (do NOT burn--it will not achieve the proper squishiness required for a PROPER s'more). Watch for the 'shmallow to swell up and get puffy looking.
  • While still on the roasting stick, lay marshmallow on top of the chocolate, use the reserved cracker to hold the 'shmallow; pull the stick out, pressing down with the cracker.
  • Viola! If you roasted the marshmallow properly, there should be a bit oozing out around the edges.
  • OPTIONS: Instead of chocolate grahams, you can use regular ones or cinnamon/sugar ones. OR try fudge-stripe cookies or chocolate chip or even GINGERsnaps!
  • ALTERNATIVE COOKING METHOD: Prepare everything up to the roasting marshmallow step. Place marshmallows on a plate, pop in the microwave for about 10 seconds (REALLY!)--watch carefully as you don't want them to explode (messy, messy!). Lift carefully with a spoon and set on the chocolate piece, top with the lid -- careful--the marshmallow can be quite hot!
  • EASY CLEAN-UP: Bringing a box of crackers, a jar of p-butter and a knife AND the roasting sticks AND the bag of marshmallows can be a hassle--and in the dark, too yet! Instead, win your Martha Stewart "Organized Camper" certificate by putting everything into a cake pan and carrying it jauntily to the fire, say something like: "OOOh, look what good thing we'll be having tonight" -- and waggle your head in a knowing way. :rofl:
  • PROPER PRONUNCIATION: S'more is a contraction of the words Some More. Do not turn this into a German phrase by calling them "Schhhhmores." Nope. They are Ssss'mores. Thanks.

Campfire S'mores image

Steps:

  • Butter a 9- by 11-inch pan.
  • Place the chocolate in a large bowl over a double boiler at a low simmer. Stir the chocolate until melted, and then turn off the heat. In a separate pot, bring the cream just to a simmer. Stir in the espresso and chile powder, and then remove from the heat. Add the cream mixture to the chocolate and whisk into a smooth, shiny consistency. Refrigerate.
  • Melt the butter in a large pot over low heat. Stir in the marshmallows and cook until fully melted. Add the vanilla paste and popped popcorn, coating thoroughly.
  • Press half of the popcorn mix into the prepared pan. Sprinkle with half of the salt and the chocolate mixture. Spread the remaining popcorn mix on top, sprinkling with the rest of the salt. Refrigerate until set.
  • Once cool enough to easily handle, cut first into rectangles and then into triangles. Let sit at room temperature until slightly tacky.
  • Crush 2 sheets of the graham crackers in a shallow dish. Place the triangles into the crumbs and press the crumbs into the bottom and sides. Place the triangles on a baking sheet and top with a few remaining marshmallows. Put under the broiler until light brown. Top with larger piece of graham for garnish.

  • Build a campfire and allow the fire to burn until it has accumulated a bed of coals. Rake the coals into a flat bed on one side of the fire.
  • Divide chocolate bar into 12 pieces.
  • Fill each cone with 2 tablespoons marshmallows and 2 chocolate pieces.
