LEMON BREAD
I often bake this sunshiny-sweet lemon bread when company's due. It has a loaf-like texture. -Kathy Scott, Lingle, Wyoming

Steps:
- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs, lemon zest and juice. Combine flour, baking powder and salt; gradually stir into creamed mixture alternately with milk, beating well after each addition. , Pour into a greased 8x4-in. loaf pan. Bake until a toothpick inserted in the center comes out clean, 40-45 minutes. Cool in pan 15 minutes before removing to a wire rack. Combine glaze ingredients; immediately drizzle over bread. Serve warm.

CANADIAN LEMON BREAD
My mother used to make this delicious bread every year at Christmas time. She was a fabulous cook. I truly don't remember anything she made turning out badly. Needless to say, I had a great teacher! :)

Steps:
- 1. Cream shortening and sugar together until creamy.
- 2. Add eggs and milk, mix well.
- 3. Add salt,baking powder, and flour, mix well.
- 4. Fold in lemon zest.
- 5. Pour into greased, 1-quart, bread pan and let rise for 20 minutes.
- 6. Bake at 350 degrees F for 45 minutes, or until done.
- 7. When still warm, remove from pan and brush the top and sides with the glaze.
- 8. The glaze should be made and left to stand while the bread is baking.

- Cream butter and sugar.
- Add 2 beaten eggs.
- Sift flour and baking powder.
- Add salt.
- Add lemon peel to the butter.
- To this add flour mix.
- Stir in milk and blend well.
- Bake in loaf pan at 350 for 50 minutes to 1 hour.
- Add powdered sugar to lemon juice.
- When bread is done, prick top with a fork and dribble lemon juice and sugar mixture over top.
