CANDY-STRIPE COOKIE STICKS

Festive candy-stripe cookie sticks are a holiday favorite, but can be enjoyed as a treat any time of year.

Steps:

  • Preheat oven 400 degrees. Combine egg whites and sugar in the bowl of an electric mixer fitted with a whisk attachment; beat on medium until foamy. Reduce speed to low. Add flour and salt; mix until just combined. Add butter, cream, and vanilla; beat until combined.
  • Transfer 1 cup batter to a small bowl; set remaining batter aside. Stir in red coloring until desired color is reached. Transfer tinted batter to a pastry bag fitted with a small plain round tip. Secure end of pastry bag with rubber band; set aside.
  • Place a 3-by-6-inch rectangle (cut out a stencil to use as a guide) on a baking sheet lined with a Silpat baking mat. Spoon a heaping tablespoon of plain batter into the rectangle; spread with a small offset spatula. Repeat. Pipe diagonal tinted stripes onto each rectangle. Bake cookies until pale golden, 6 to 8 minutes.
  • Immediately loosen edges with a spatula, and flip cookie over. Starting from one long side, roll cookie into a stick. Place seam side down, on a clean work surface; let cool until set. Quickly repeat with second cookie.
  • Repeat process, tinting and baking 2 or 3 cookies at a time.

Peppermint Twist Candy Cookies image

Steps:

  • For the cookies: In a medium bowl, whisk together the flour, baking powder and salt. In a separate large bowl using an electric mixer, beat together the butter, granulated sugar and brown sugar, mixing until pale yellow and fluffy, 3 minutes. Add in the peppermint extract and eggs and mix well. Slowly incorporate the dry ingredients into the wet ingredients and mix well.
  • Transfer the dough to a floured work surface, divide into two disks, wrap in plastic and chill in the refrigerator for about an hour.
  • Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
  • Working with one disk at a time, roll out the dough to 1/4-inch thickness. Cut out candy cane shapes with the cookie cutter and place the cookies about 2 inches apart on the prepared baking sheets. Re-roll the scraps to get as many cookies as possible, returning the dough to the refrigerator to chill if necessary.
  • Bake just until the edges start to brown, 10 to 12 minutes. (Bake one sheet at a time for even cooking and browning). Transfer the cookies to a wire rack and let cool.
  • For the royal icing: In the bowl of a stand mixer using a whisk attachment, combine the confectioners' sugar and meringue powder and mix for 30 seconds. Add 1/3 cup water and the peppermint extract and continue mixing on low until the icing forms peaks, 8 to 10 minutes. Adjust the consistency of the icing with additional water if necessary.
  • Set aside some of the icing in a small bowl and add enough food coloring until the desired shade of red is reached.
  • Ice the cookies with the white icing and let dry completely. Decorate with the red icing and crushed candies to make a candy cane pattern.

Steps:

  • Sift together and set aside the flour, baking powder, and salt.
  • Cream butter and sugar til fluffy.
  • Beat in egg and oil of anise.
  • Sift in dry ingredients a third at a time, alternately adding with milk.
  • Stir until well blended.
  • Divide dough in half and tint one half pink.
  • Pinch off 1 tsp each of pink and white dough and roll each into a pencil-thin strip about 5 inches long on a lightly floured board.
  • Place strips side by side, pressing ends together, then twist gently into a rope.
  • Shape into candy canes if desired, or leave straight for old-fashioned peppermint stick look.
  • Bake 1 inch apart at 350 degrees for 10 minutes, or until firm.
  • Cool on wire racks, then store between layers of waxed paper in cookie tin.

Steps:

  • Set oven to 350°F.
  • Grease a cookie sheet/s.
  • In a bowl using an electric mixer beat 1/2 cup butter, 6 tablespoons butter, oil and orange zest until very well blended (about 4 minutes).
  • Add in 1 cup plus 2 tablespoons sugar, egg and vanilla; beat until blended (about 2 minutes).
  • In another bowl mix the flour, baking powder and baking soda; add into the creamed ingredients alternately with the orange juice.

  • Preheat oven to 350 degrees F (180 degrees C).
  • Mix well the shortening and butter, sugar, egg, almond and vanilla. In a separate bowl, mix flour and salt and add to shortening mixture. Divide dough in half.

Using a hand-held or stand mixer with a paddle attachment, cream the butter and sugar together on medium speed for 5 full minutes, scraping down the sides and the bottom as necessary. Add the egg yolks and vanilla, beating on medium-high until fully combined. Scrape down the sides and bottom of the bowl as necessary. Pinch together each pair at one end; twist the colours together. Roll each twist into a smooth rope, about ½-in. (1-cm) thick. Bend the ropes into candy cane shapes. Make 18 canes.
  • Bake in batches on lined baking sheets, 12 to 15 min., until cookies begin to firm up and turn pale golden on bottoms. Cool on baking sheet 5 min. before transferring to wire rack to cool completely. Store in airtight container 2 to 3 days.
