BACON, ONION AND CHEESE TART
This is my take on a traditional French tarte flambee, made on a crispy crust and topped with fromage blanc, bacon and onions.

Steps:
- Preheat the oven to 425 degrees F. Line 2 sheet pans with parchment paper.
- In a medium saute pan, cook the bacon over a medium-low heat until it begins to render, 3 to 5 minutes. Add the onions and cook until they begin to soften, about 3 minutes. Season with pepper. Set aside to let cool. Add the thyme to the cooled bacon-onion mixture.
- In a bowl, combine the farmer's cheese, creme fraiche, egg yolk and salt and pepper to taste. Set aside.
- Flour a flat surface and place the puff pastry on top. Flour the top and gently roll into a 13-by-18-inch rectangle. Cut the pastry in half and transfer each to a lined sheet pan. Using a fork, dock the puff pastry (pierce it slightly with the tines), leaving a 1-inch border untouched.
- Divide the cheese mixture between the two sheets of pastry and spread evenly on the docked area. Top each tart with half of the bacon-onion mixture.
- Place the tarts in the oven on the lower racks and bake, rotating halfway through, until the crusts are dark golden, about 25 minutes. Garnish with the pecorino and chives.
FIG TART WITH CARAMELIZED ONIONS, ROSEMARY AND STILTON
I used packaged puff pastry here because I thought the dense, almost candied figs would work well with an airy, flaky crust - one that I didn't have to make. The cheese and rosemary helps balance the intensity of the figs, while a drizzling of honey at the end brings out the sweetness of onions and figs.

Steps:
- In a large skillet over low heat, melt butter with oil. Add onions, rosemary and sugar. Cook, tossing occasionally, until onions are limp and golden brown, 30 to 40 minutes. Stir in the vinegar, scraping any browned bits from bottom of pan.
- In a small bowl, whisk together the milk and egg until smooth. Stir in the onions. Preheat oven to 400 degrees. Line an 11 by 17-inch baking sheet with parchment paper. On a lightly floured surface, roll out pastry to a 9 by 12-inch rectangle. Transfer to baking sheet.
- Use a fork to spread onion mixture evenly over pastry (let excess egg mixture drip back into bowl), leaving a 1-inch border. Arrange figs, cut-side up, in even rows on onion mixture. Scatter cheese and pine nuts over figs. Use a pastry brush to dab edges of tart with egg mixture. Gently fold over edges of tart to form a lip and brush with more egg mixture.
- Bake until pastry is puffed and golden, 25 to 30 minutes. Serve, sprinkled with rosemary needles and drizzled with honey, if desired, warm or at room temperature.

GRUYERE & CARAMELIZED ONION TARTS
Garlic and onion is a match made in heaven in my opinion, so I love creating new recipes to showcase the pair. Gruyere cheese adds impeccable flavor to the eye-catching starter. -Lisa Speer, Palm Beach, Florida

Steps:
- Heat butter and oil in a large saute pan over medium heat. Add onions and and stir to coat in oil. Grab a glass of wine and a magazine and plop yourself in front of the stove because you are going to be here for a while. You will cook the onions for 60 minutes total, stirring every 4-5 minutes or so. After they've cooked for 10 minutes add a pinch of salt. After they've cooked for 40 minutes add a teaspoon of sugar. After they've finished cooking for 60 minutes and are a gorgeous dark brown color, deglaze the pan with the white wine, season with salt and pepper to taste, then set aside. Preheat oven to 400 degrees. Unwrap the puff pastry and cut along the seams of each sheet, creating 6 rectangles total. Lightly flour your work surface and roll each piece into a 3.5″ x 12″ rectangle. Use a 3″ cookie cutter to make four tarts out of each rectangle. Transfer tarts to (2) parchment lined baking sheets. Combine puff pastry scraps into a ball, roll them out to the same thickness as your previous tarts and use the cookie cutter to make 10-12 more tarts. Arrange tarts on the two baking sheets about an inch apart. You will have 30-32 tarts total. Use a 2″ cookie cutter to score each tart in the center, creating a half inch wide crust. Brush the crust portion of the tart with the egg wash. Heat fig jam in a small saucepan over medium heat just until it becomes loose and spreadable. Spread a teaspoon or so of fig jam in the center of each tart. Top that with a teaspoon or so of caramelized onions. And then, you guessed it, top that with a teaspoon or so of blue cheese. Divide thyme evenly between the tarts, sprinkling a few leaves in the center of each tart. Bake tarts for 15-18 minutes or until the crust starts to get dark golden brown Remove tarts from the oven and drizzle with honey. Serve warm and enjoy! NOTES These tarts are also delicious at room temperature!

- Caramelize the onions: Peel the onions and cut into thin slices. Heat clarified butter in a big frying pan or pot. Add the onions. You can start cooking them over medium-high / medium heat, and then gradually lower the heat as they start to get color to medium-low / low heat. Don't cook the onions over too high heat or they will burn and be bitter. Stir from time to time (at the beginning rarely, later more often, and at the end very often). The onions should be partially caramelized and it should take about 30 minutes. We don't need to fully caramelize the onions (this would take about 50-60 mins) because they will be baked in the oven. Unfortunately, this process can not be speeded up. Take the onions off the pan and leave to cool.
- Take the dough out of the fridge. Score the dough: with the tip of a sharp knife, score through the top layers of the puff pastry by running the knife along all four sides of the dough (leave about 1/2 inch / 1.5 cm border). Do not cut all the way through the dough. Transfer the pastry, along with the parchment paper that comes with it to a baking sheet. Prick the dough (not the borders) with a fork.
