Catfish Baked In Foil Recipes
FISH IN FOIL
The 'no smell' fish recipe that is the ONLY one I make for my family (I hate fish, they LOVE it!). Take foil packets to table for service, and keep them around for the discarding of bones and skin. Then when dinner's done, haul those babies to the outside trash.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Rinse fish, and pat dry.
- Rub fillets with olive oil, and season with garlic salt and black pepper. Place each fillet on a large sheet of aluminum foil. Top with jalapeno slices, and squeeze the juice from the ends of the lemons over the fish. Arrange lemon slices on top of fillets. Carefully seal all edges of the foil to form enclosed packets. Place packets on baking sheet.
- Bake in preheated oven for 15 to 20 minutes, depending on the size of fish. Fish is done when it flakes easily with a fork.

- Preheat the oven to 375°F.
- Lightly coat a 13x9-inch baking dish with oil cooking spray.
- Pat the fish dry.
- Combine the dry ingredients in a shallow bowl and stir well.
- Dip the catfish in the melted butter and roll in the bread crumb mixture.
- Arrange the fillets in the prepared baking dish.
- Bake uncovered for 20-30 minutes or until the fish flakes easily.
- Garnish with lemon wedges and parsley sprigs.

- Wash all the veggies. Slice them with the knife or using the mandolin. Try to slice onions and zucchini very thin but tomatoes not so much. Place sliced vegetables on the deep baking tray. This is going tho be our veggie pillow.
- Wash the catfish. Scrub it very well because catfish has lots of mucus and can be very slimy*. Make a few not dip slits in the catfish , almost cutting till the spine.
