CHARISHMA'S SALT FREE AND FAT FREE WHITE BASMATI RICE

Rice rice rice! If you came over to my apt. in Orlando, rice is one thing you will get without fail. Why? Oh because the most challenging thing for me was to make RICE in USA, believe it or not! In Oman, our cook cooked rice with atleast 2 tbsps. of oil/ghee/butter and minium 1 tsp of salt per cup of rice! When I came here and started cooking, I would do the same. However, one fine day I decided to take the bull by the horns and devise my own way to make rice in a way by which EVERYONE could enjoy it GUILT-FREE! I am PROUD to say that this is what I created over a period of 1 week! This is how I make my rice now and keep my family happy. My picky eater brother says that this can sell for a MILLION US DOLLARS:) Dont know about that, but I will settle with alot of nice reviews;)

Charishma's Salt Free and Fat Free White Basmati Rice image

Steps:

  • Put the water to boil in a pot on the stove-top.
  • Once it starts boiling rapidly, lower flame and add the drained rice to it.
  • Mix once and then increase the flame.
  • Bring to a boil.
  • Once it comes to a boil, lower flame and allow it to cook, uncovered, until all the water has been absorbed by the rice.
  • Remove from heat.
  • Fluff the rice with a fork or a spoon.
  • Now, carefully transfer the cooked rice to a rice strainer.
  • Mix once with a spoon or fork.
  • Open the cold water faucet in your kitchen sink.
  • Place the cooked rice that's in the strainer under the cold water faucet.
  • Let the cold water wash over every single grain of rice.
  • Keep mixing the rice grains as the water gushes over them.
  • Once you have given the rice grains a"cold water bath"{as I call it}, and drained out as much water as possible from the rice through the rice strainer, transfer the rice to a large plate.
  • Now, spread the grains as much as possible from each other in the plate.
  • Put the plate in your microwave oven.
  • Microwave for 10 minutes.
  • Dont adjust the power setting to Hi or Low or Medium Hi or Medium Low.
  • Don't bother about that.
  • Just microwave the rice, uncovered, for exactly 10 minutes.
  • Do not mix the rice in these 10 minutes.
  • Do not disturb it.
  • Let the RICE GODDESS WORK HER MAGIC on every single grain.
  • Once 10 minutes are up, let the rice sit for 2 minutes before you open the microwave and take out the cooked rice.
  • Mix well and serve it right off the plate.
  • If its not gone in 30 seconds, I'll change my name!

Steps:

  • Cook the butter and onions over medium heat until translucent, about 3 minutes. Add the rice and toss until all of the grains are coated with the butter. Add the water and salt, cover and cook until the water is absorbed and the rice is tender, about 15 to 20 minutes. Turn off the heat and allow to sit covered for 5 to 10 minutes. Add the scallions and parsley, fluff with a fork, and serve.

SPICED BASMATI RICE PILAF

To wash or not to wash rice? In the case of basmati, no matter what, I always soak it. It cleans out any small particles and it also rids the rice of any starch on the grain. I do use the soaking water to cook the rice. This recipe is hypnotic and makes cooking such a simple ingredient easy. I leave the bay leaves and cinnamon in for rustic elegance. Remove them once cooked, if you want.

Spiced Basmati Rice Pilaf image

Steps:

  • Prepare the rice: Soak the rice in 3 cups cold water for 30 minutes to remove the starch.
  • Cook the rice: Heat a medium saute pan over medium heat and add butter, onions, and 2 tablespoons water. Cook until translucent but not browned, 5 to 8 minutes. To the pan add cardamom seeds, cayenne, cumin seeds, fennel seeds, cinnamon stick, and bay leaves. Stir, and toast until fragrant, 2 minutes. Then, add the rice plus soaking liquid to the pot. Add salt to taste. Bring to a simmer for about 5 minutes. Cover, turn off the heat, and let steam for another 10 minutes. Fluff the rice gently with a fork and serve.

2 cups basmati rice

Challaw (Cardamom and Cumin Basmati Rice) image

Steps:

  • In a large pot with a lid, bring 8 1/2 cups water to a boil over high heat. Meanwhile, drain the rice in a large fine-mesh sieve or colander and rinse under cold water until the water runs clear. Add the rice and 1 tablespoon kosher salt (or 1 1/2 teaspoons coarse kosher salt or fine salt) to the boiling water. Boil uncovered, until the grains seem to have doubled in length, 5 to 6 minutes.
  • Meanwhile, in a small saucepan or kettle, bring 1 1/2 cups of water to a boil and keep at a simmer. Place the cardamom pods on a cutting board and lightly crack them with the side of a large knife.
  • Drain the parboiled rice in the sieve or colander and return the rice to the pot. Add the cracked cardamom pods and any seeds that may have popped out, the cumin seeds and 1 tablespoon kosher salt (or 1 1/2 teaspoons coarse kosher salt or fine salt). Mix gently to combine, taking care to not break the rice grains. Drizzle with the oil and the just-boiled water from the saucepan, and stir gently to coat the rice.
  • Cover the pot and cook over high heat until steam escapes from beneath the lid, 3 to 6 minutes. This is a critical step in preparing the rice to avoid overcooking it. Once you see the steam, reduce the heat to low and cook until the rice is tender and all the water is gone, another 20 minutes. Serve immediately.

Steps:

  • In a fine-mesh sieve, rinse the rice until the water runs clear, then set aside to drain.
  • In a medium saucepan or pot, heat the oil over medium. Add the onion and garlic, and cook, stirring frequently, until softened and fragrant, about 5 to 7 minutes. Take care not to burn the garlic by reducing the heat slightly if necessary.
  • Add the rice and sprinkle it with the salt and turmeric. Stir to combine, then cook the rice and spices in the oil for about 1 minute. Sticky Coconut Chicken and Rice image

Steps:

  • Heat oven to 375 degrees. Rub chicken with 1 tablespoon of oil, and season with 1 teaspoon of salt and ¼ teaspoon of pepper.
  • In a large Dutch oven, heat 2 tablespoons of the oil over medium. Working in two batches, brown chicken, turning halfway, until no longer pink, around 5 minutes per batch. Transfer to a plate.
  • Add the remaining 1 tablespoon oil, the ginger and the garlic to the empty pot, and stir until fragrant, 30 seconds. Add rice and stir until evenly coated in the oil.
