Steps:
- Cook and stir bread crumbs in butter over medium heat until toasted and golden brown.
- Mix sugar and lemon peel and cinnamon, set aside.
- Place 1 cup bread mixture in greased souffle dish or casserole pan.
- Top with half the apples and sugar mixture.
- Spoon half the jam on top. Repeat, ending with 1 cup of bread crumbs.
- Bake at 350 oven until apples are tender, about 35 - 40 minutes.
- Beat whipping cream and 2 tablespoons sugar an dvanilla in chilled bowl until stiff. Fold in Rum or Brandy, serve with the Apple Charlotte.

ROASTED LOIN OF WILD BOAR WITH APPLE CHARLOTTE
Boar is a greatly ignored meat in the chef's repertoire. While admittedly difficult to find, it can be special ordered, and it is a sublime gastronomic treat. This homespun preparation by Joe Mannke, chef a Rotisserie for Beef and Bird in Houston, marries the boar with a tasty apple charlotte that is the perfect companion.

Steps:
- Preheat oven to 450F.
- Rub boar on all sides with salt, pepper, and thyme. Place boar in a roasting pan and add water to pan. Roast in preheated oven for 40 minutes. Remove roasting pan from oven.
- Prepare charlotte by adding apples, zest, ginger, cinnamon, cloves, brown sugar, wine, and Calvados around the roast.
- Return pan to oven and bake for 15 to 20 minutes, or until apples are cooked through.
- Mix together applesauce, salt, and egg yolks and pour over apples.
- Return to oven for 5 minutes longer.
- Mix the butter with the bread cubes.
- Sprinkle over the apple mixture and bake for 10 minutes longer, or until golden brown, or when meat thermometer registers 160F.
- Remove roasting pan from oven, remove boar, and let rest for a few minutes.
- Slice boar on the bias.
- Using a spatula, transfer charlotte to a large serving platter. Place sliced boar atop charlotte. Garnish with thyme sprigs and serve.
- Recommended wines: A full bodied Chardonnay will mar ry nicely with the apple flavor in the charlotte. A Zinfandel will emphasize the meaty flavors of the boar. Either wine is a treat with this dish.

- Preheat oven to 350 degrees F (175 degrees C).
- Place apples, 1/2 cup sugar, lemon zest and wine in a heavy saucepan.
- Pour in water to cover completely.
- Bring to a boil, then reduce heat and simmer, covered 15 minutes.
- Place raisins in a small bowl and cover with water.
- Let soak 10 minutes, then drain and reserve.
- In a small bowl, cream together butter and remaining sugar until well combined.
- Coat the bottom and sides of a 2-quart baking dish with this butter mixture.
- Line bottom and sides of the baking dish with bread slices, overlapping slightly.
- Drain the apples and combine them with the drained raisins.
- Spoon the fruit mixture into the lined dish.
- Cover the top with the remaining bread.
- Sprinkle with the remaining sugar.
- Bake in the preheated oven 1 hour.
- To serve (warm or cold), pour rum over the warm charlotte and light it with a long match or kitchen torch.

CHARLOTTE AUX POMMES A LA NORMANDE
This is certainly an amazingly popular dessert in Normandy where it is sometimes served with an apricot sauce, or with Creme aux Oeufs, a sweet custard sauce, the recipe for which is posted separately. Supposedly, my Grandfather was always able to get on my Grandmother's good side by bringing home an Apple Charlotte from a French bakery on Madison Avenue, which, we were told, she never shared with my Father. This is traditionally made with Pain Brie, the recipe for which is posted. I like a mixture of firm, tart apples and a few sweet, softer apples--like Granny Smiths and a couple of MacIntosh)

Steps:
- Cut the crusts from the brread and reserve for other use such as bread crumbs.
- Lightly brush both sides of each slice with butter.
- Line the bottom of a charlotte mold (it should be 6" across by 3" deep --you may use a deeper mold--it will just require extra care in unmolding) with 3 to 4 of the slices of bread cut in triangles and overlapping by about 1/4".
- Line the sides of the mold with 6 to 8 slices cut in rectangles that are the same height, they should also overlap slightly.
- Reserve 3 slices for the top.
- Pre-heat the oven to 350 degrees.
- Saute the apples in the remaining butter for 3 to 4 minutes and add the sugar and cinnamon; stir well and cook another 1 to 2 minutes.
- Pour the apples into the bread-lined mold and press down lightly with the back of a spoon.
- Cover with the reserved slices of buttered cut to fit the space.
- Place the mold on a sheet pan and bake in the oven for 45 minutes.
- Cool for at least thirty minutes and unmold onto a serving plate.
- Serve warm or room temperature with Creme aux Oeufs or apricot sauce.
- Note: This version is not overly sweet, certainly not as sweet as many other Charlottes.

- Pre-heat oven to 375°F.
- Put the apples, cinnamon, lemon zest and juice and sugar in a saucepan.
- Cover and simmer gently until pulpy, stirring occasionally.
- Beat thoroughly with a wooden spoon, then cook, uncovered, over a high heat, stirring continuously, until any excess liquid has evaporated and the purée is very thick.
- Brush the butter all over the slices of bread.
- Line the base and sides of a greased 6 inch deep cake tin (such as a Christmas cake tin or substitute a coffee can or vegetables tin, as long as it does not have ridges) with the slices of bread, making sure that they overlap.
- Spoon in the apple purée and cover with more over-lapping slices of bread.
- Bake for about 30 minutes, until the top is golden brown.
- Serve at once, turned out and accompanied with real custard or fresh cream or clotted cream to pour over it.
EASY APPLE CHARLOTTE
Apple Charlotte is a British dessert that is made with apples and white bread and baked in a molded pan. This recipe is easier to make and tastes just as delicious, if not better. And you don't need the molded pan! Serve warm with a scoop of vanilla ice cream or at room temperature with a sprinkle of powdered sugar.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 6.5-inch springform pan with nonstick cooking spray and line with parchment paper. Spray parchment paper with nonstick cooking spray.
- Toss apples with lime juice and set aside. Mix flour, cinnamon, ginger, and salt in a bowl and set aside.
- Combine eggs with brown sugar, white sugar, and vanilla extract in a second bowl and beat with an electric mixer until creamy. Add dry ingredients and mix until just combined. Pour about 1/3 of the batter into the prepared pan. Add apples and top with remaining batter.
- Bake in the preheated oven until a toothpick inserted in center comes out clean, 50 to 60 minutes. Transfer to a wire rack and cool for 15 minutes.
- Run a knife around the springform pan, release springform, and flip apple Charlotte onto a plate. Immediately flip the cake onto a serving platter.
