Steps:

  • Heat oven to 375°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In large bowl, mix apples, cherries, sugar and flour until blended. Spoon into baking dish. Cover with foil.
  • Bake 40 minutes. Uncover; stir gently. Sprinkle with granola; press slightly. Bake uncovered 10 to 15 minutes longer or until apples are tender and topping is light golden brown. Let stand 15 minutes before serving. Serve with yogurt.

Steps:

  • Drain cherries, reserving juice. Add enough water to measure 1/2 cup. Set cherries aside. In a microwave-safe 8-in. square baking dish, combine 1/2 cup sugar, cornstarch and reserved juice until smooth. Microwave, uncovered, on high for 3-4 minutes or until thickened, stirring occasionally. Gently stir in the rhubarb, basil, reserved cherries and remaining sugar., In a small bowl, combine the flour, oats, brown sugar and salt. Cut in margarine until mixture resembles coarse crumbs. Sprinkle over cherry mixture. Bake, uncovered, at 350° for 30-35 minutes or until golden brown.

Steps:

  • 1. Preheat oven to 375 degrees F.
  • 2. Mist an 8 x 8" square pan or dish with cooking spray.
  • 3. Arrange apples (or other fruit) in the pan.
  • 4. Mix all other ingredients together until crumbly & put over the fruit.
  • 5. Bake around 30-35 minutes, until apples are tender & the topping is golden brown and feels crunchy.
  • 6. Serve warm or cold with whipped cream or ice cream.
  • 7. NOTE: Recipe can be easily doubled. Bake in a 13 x 9" pan with the same baking time.

Steps:

  • Make topping:
  • Mix oats, brown sugar, flour, cinnamon and salt in large bowl. Add butter and rub in until coarse crumbs form. Mix in almonds and ginger. (Topping can be prepared 1 day ahead. Cover and refrigerate.)
  • Make filling:
  • Preheat oven to 375°F. Butter twelve 1 1/4-cup soufflé dishes. Combine apples, cherries, sugar, lemon juice, flour and ground cinnamon in large bowl. Mix to blend well. Divide filling among prepared dishes.
  • Sprinkle topping over apples. Bake until topping is golden brown, about 40 minutes. Serve warm with ice cream.

The very first time that I made Cherry Crisp, my brother happened to be visiting. He is an ice cream lover-but he passed up the scoops of vanilla that he tops most desserts with so he could taste the cherries better! Wheat, soybeans and milo are the main crops on our farm. We also have three small cherry trees. I apportion all of that harvest for this recipe. My husband's is the manager of a coop. I work part-time as a church secretary...teach piano in our home...and enjoy making clothes for myself and our 3-year-old daughter. Cross-stitch is one of my favorite hobbies.
