CHERRY CHOCOLATE CHIP COOKIES

We run a cherry orchard, so I'm always dreaming up new cherry recipes. These cookies are among of my family's favorites.-Pamela Alexander, Prosser, Washington

Cherry Chocolate Chip Cookies image

Steps:

  • In a small bowl, soak cherries in hot water for at least 10 minutes., Meanwhile, in a large bowl, cream the shortening, butter and sugars until light and fluffy. Beat in the eggs, orange zest and vanilla. Combine the oats, flour, baking soda, cinnamon and salt; gradually add to creamed mixture and mix well. Stir in the chocolate chips and cherries with liquid., Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 12-14 minutes or until edges are lightly browned. Cool for 1 minute before removing from pans to wire racks.

I created these after a trip up north to Traverse City, Michigan's Cherry Festival. Wonderful with their dried cherries! A big hit wherever I take them!

Cherry Chocolate Chunk Cookies image

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease baking sheets. Whisk together the flour, baking soda, and salt; set aside.
  • Beat the unsalted butter, butter flavored shortening, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Add the eggs one at a time; beat in the vanilla extract and almond extract with the last egg. Mix in the flour mixture until just incorporated. Fold in the cherries, walnuts, pecans, and chocolate chunks, mixing just enough to evenly combine. Drop by rounded spoonfuls onto the prepared cookie sheets.
  • Bake in the preheated oven until browned around the edges, 11 to 13 minutes. Cool on cookie sheet for 2 minutes; remove cookies to a wire rack to cool completely.

  • In mixing bowl, cream shortening, butter and sugars until fluffy.
  • Beat in eggs, orange peel and vanilla.
  • Combine oats, flour soda, cinnamon and salt and gradually add to creamed mixture beating til combined.
  • Stir in cherries and chips with water you soaked the cherries inches.
  • Drop by rounded tablespoon fulls 2" apart onto ungreased cookie sheets.
  • Bake at 350°F for 12-14 minutes or til edges are lightly browned.
  • Cool 1 minute before removing from cookie sheets to wire rack.

  • Preheat oven to 325.
  • Cream together butter, and sugars.
  • Add the egg, vanilla, and cherry fruit spread and mix until well combined.
  • In another bowl combine flour, baking soda, and salt.
  • Slowly add the flour mixture to the butter mixture.
  • Add the chip until well integrated.
  • Drop onto a cookie sheep lined with parchment or if you don't have parchment, foil works. Bake between 8 - 15 minutes depending on the size of the cookies. The bottoms will be golden and the tops look underdone but they are done.

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Beat the butter and sugar together in a bowl. Add egg and vanilla and beat well. Add the flour, cocoa powder, salt, baking soda, and baking powder and stir until smooth. Roll the mixture into 1-inch balls about the size of a walnut (larger if desired). Place on ungreased cookie sheet. Press center of each ball with thumb.
  • Drain cherries and reserve juice. Place a cherry in indentation of each cookie ball.
  • In a saucepan, heat condensed milk and chocolate chips until chips are melted. Stir in 4 teaspoons of cherry juice. Spoon about 1 teaspoon of mixture over each cherry and spread to cover cherry. (More cherry juice may be added to keep frosting of spreading consistency.)
  • Bake in preheated oven for 10 minutes.
