Oven Roasted Chicken With Lemon, Garlic and Rosemary image

Steps:

  • Cut chicken in half lenghtwise.
  • Place in large oven proof dish.
  • Squeeze juice from the lemons over the chicken.
  • Add the lemon to the dish along with garlic, rosemary, red pepper, salt and pepper.
  • Marinate for 2 hours, turning chicken a few times.
  • Preheat oven to 400 degrees.
  • Roast chicken for 45 minutes.
  • Can broil at the end for darker, crisp skin.
  • Cut into serving pieces.

1 -3 1/2 lb chicken
4 lemons
8 garlic cloves, peeled
16 sprigs rosemary
1/2 teaspoon red pepper flakes
salt and pepper

Lemon And Chicken Casserole Recipe by Tasty image

Steps:

  • Sear the chicken in the casserole dish until golden, with 1 tbsp of olive oil (10-15 mins).
  • Once chicken is cooked, remove and add the shallots and carrots to the dish with 4 tbsp of water. Season with salt and pepper. Fry until softened.
  • Add garlic to the carrots and shallots, stirring for 1 minute, then add the chicken pieces to the dish.
  • Grate the lemon zest into a heatproof jug. Squeeze in the lemon juice, add honey and crumble in a stock cube. Poor in 1 litre of boiling water. Stir to melt honey.
  • Add the potatoes, pour in lemony stock and add the rosemary and thyme. Cover and bake for 2 hours at 350 degrees. When there is 20 minutes of bake time left, add the gravy and finish baking.
  • Serve warm.

Chicken Roasted Casserole With Garlic and Lemon image

Steps:

  • Preheat oven to 375. Remove the giblets in the cavity! (Good for some soup or the cat!) Remove the large pieces of fat around the cavity. Wash the Roaster inside and out under cold water then dry with a paper towel.Salt and pepper the inside of the cavity then pour a spoonful of olive oil inside the cavity.
  • Take a handfull of garlic and the rosemary and stuff it inside. Don't for get to seperate the garlic pods and remove the cloves! Squeez 2 lemon halved inside the roaster and put the lemon inside also.
  • Tie the legs together or trust the legs with scewers. Brush the outside of the roaster with the olive oil, sprinkle with salt and pepper. Set it in your casserole dish with the breast facing up.
  • Flatten the pieces of fat and lay them across the breast. Taking a clever or wide knife smash the garlic flat. Lay it on the roaster along with the rest of the rosemary. Try to get the garlic and rosemay all over the roaster. Squeez the rest of the lemon over the roaster and toss in the lemons to.
  • Roast for 1 hour on the lower rack. After 1 hour turn up to 400 for 1/2 hour removing the lid to brown. This is very good with garlic roasre potatoes.
