LEMON-CUMIN CHICKEN

Steps:
- For the marinade: In a medium bowl, whisk together the oil, lemon zest, lemon juice, garlic, cumin, salt and pepper flakes until smooth. Add the chicken and toss until coated with the marinade. Cover and refrigerate for at least 4 hours or overnight. (Can also be made in a resealable plastic bag.)
- For the pesto: In a food processor, blend the mint, spinach, cheese, walnuts, garlic, lemon juice, salt and pepper until chunky. With the machine running, slowly add the olive oil until smooth.
- Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Spray the grill lightly with vegetable oil cooking spray. Remove the chicken from the marinade. Discard the marinade. Grill the chicken until cooked through, 4 to 5 minutes on each side. Place on a platter and serve with the pesto.
BAKED GARLIC PARMESAN CHICKEN WINGS RECIPE BY TASTY

- Preheat oven to 300ºF (150°C).
- In a large bowl, mix together the salt, pepper, Italian seasoning, and cumin. Pour chicken wings into the bowl and coat with the spice mixture.
- Transfer wings on to a baking sheet, bake for 20 minutes. Then increase the oven temperature to 425ºF (220°C) bake for 15 more minutes.
- While the chicken is baking, mix together the parmesan cheese, garlic, oil, and fresh chopped parsley.
- When the chicken is cooked through, toss the wings with the garlic/cheese/olive oil mixture. Serve immediately

LEMON-GARLIC-PEPPER CHICKEN WINGS
Steps:
- Cut 3 pounds of chicken wings into 3 sections; save the wing tips for stock. Toss the wings with a little neutral oil to keep them from sticking.
- Heat a charcoal or gas grill; the fire should be moderately hot and the rack 4 to 6 inches from the heat. Leave one side of the grill cooler for indirect cooking.
- Put the wings on the cool side of the grill. Cover the grill, and cook, checking and turning once or twice, until most of the fat has been rendered and the wings are cooked through, 15 to 20 minutes.
- While the wings cook, combine 1/3 cup olive oil, 3 tablespoons lemon juice, 2 tablespoons minced garlic, salt and lots of freshly ground black pepper in a large bowl.
- When the wings are cooked, add them to the bowl with the sauce, and toss to coat. Now put the wings on the hot part of the grill and cook, uncovered, turning as necessary, until they're nicely browned on both sides.

CUMIN-MARINATED CHICKEN WINGS
Steps:
- Cut off the wing tips, reserving them for another use such as stock if desired, and halve the wings at the joint. In a heavy-duty resealable plastic bag mix together the buttermilk, the garlic, 3 tablespoons of the cumin, and the salt. Add the wings, tossing them to coat them well, and let them marinate, chilled, for at least 6 hours or overnight. Drain the wings and bake them, skin side up, on the oiled rack of a broiler pan in a preheated 475°F. oven for 15 minutes. In a small bowl stir together the remaining 1 tablespoon cumin, the lemon juice, and salt to taste and brush the wings with the mixture. Bake the wings for 10 minutes more, or until they are golden.
LEMONY ROASTED CHICKEN WINGS
These meaty out-of-the-ordinary roasted wings are infused with lots of lemon, garlic and rosemary, then roasted on a bed of fingerling potatoes. Use a large roasting pan that's at least 3 inches deep, or a big earthenware gratin dish, or a couple of Pyrex lasagna pans side by side. The lemony chicken and potatoes are delicious hot and crisp, but just as good at cool room temperature.

- Heat oven to 400 degrees. Rinse potatoes with lukewarm water and pat dry.
- Spread chicken wings out on a baking sheet or cutting board in a single layer. Season both sides of wings generously with salt and plenty of freshly ground black pepper. Sprinkle with red-pepper flakes as desired.
- Transfer seasoned wings to a large bowl. Add olive oil, lemon slices, rosemary and garlic and toss well with (plastic-gloved) hands so everything is evenly coated.
- Place potatoes on the bottom of a roasting pan. Arrange seasoned wings over potatoes in a single layer. Add wine and cover pan tightly with foil.
- Bake, covered, for about 45 minutes, until potatoes are done. Remove foil and return the pan to the oven and bake about 20 minutes more, until wings are nicely browned. Using tongs, turn wings over and bake for another 20 minutes to brown the wings' other side. Sprinkle with dried oregano, and serve hot or at room temperature.

- In a large mixing bowl, combine the oil, lemon juice, lemon zest, garlic, salt and pepper; whisk to combine. Add the chicken wings and spoon the marinade over any exposed wings. Rotate the wings in the marinade periodically bringing wings from the bottom of the bowl to the top and visa versa.
- Preheat the oven to 425 degrees. Fit two large rimmed baking sheet pans with foil (dull side up) and baking/cooling racks.
- When the oven reaches 425 degrees, remove the wings from the marinade with tongs allowing any excess marinade to drain back into the bowl. Place them on the prepared racks, skin side up, leaveing some space between them. Bake for 35 minutes until the wings reach an internal temperature of 165 degrees F and juices run clear. - Heat a saucepan over medium heat. Melt the butter and stir in the garlic. Cook for 1 to 2 minutes, or until the garlic is lightly browned.
- Add the ground cumin, tomato sauce, Worcestershire sauce, salt and pepper. Reduce heat to low and simmer the sauce for about 3 to 5 minutes or until thickened. Set aside.
