CHICKEN TETRAZZINI

There's no need to create a complicated sauce for this easy chicken tetrazzini recipe. With some precooked chicken and a couple cans of soup, you can have a fuss-free baked pasta dinner that's sure to be a hearty, homemade favorite.

Chicken Tetrazzini image

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Cook spaghetti as directed on package using minimum cook time; drain.
  • Meanwhile, in 10-inch nonstick skillet, melt butter over medium-high heat. Cook mushrooms in butter 6 to 8 minutes, stirring occasionally, until tender and browned.
  • In large bowl, mix cooked spaghetti, mushrooms, chicken, soup, sour cream and pepper. Pour mixture into baking dish. Sprinkle with cheese.
  • Bake 40 to 45 minutes or until bubbling on edges and completely heated through. Let stand 5 minutes before serving. Sprinkle with parsley.

TURKEY TETRAZZINI - DEE DEE'S

A great way to use up that leftover Christmas Turkey or Chicken. I used two methods of cooking, starting on top of the stove and finishing in the oven. While I used fresh pasta, you can use store bought as well. I have a new pasta machine I'm enjoying and must say it does make a nice difference. Hope you enjoy!

Turkey Tetrazzini - Dee Dee's image

Steps:

  • Preheat oven to 375 degrees. Grease a 9 X 13-inch casserole dish.
  • Cook spaghetti until al dente; drain and set aside.
  • In a large skillet, melt butter over medium high heat. If using; add shallots and saute until tender. Add flour, cook and stir for about 2 to 3 minutes. Gradually stir in stock and continue cooking until sauce is smooth and thickened. Stir in cream and wine; cook just until bubbly. Add thyme, salt and pepper. Remove from heat and stir in Turkey, mushrooms and 1/2 cup parmesan cheese. Taste test and add additional seaonsings if desired.
  • Place pasta in prepared casserole dish; pour turkey mixture evenly over top of pasta.
  • Mix panko and the other 1/2 cup parmesan cheese and sprinkle over turkey mixture.
  • Bake for 20 to 25 minutes or until bubbly around the edge.
  • Once cooked, turn broiler on for 2 to 3 minutes to brown top.

1 cup(s) parmesan cheese, grated (1/2 to be used in mixture reserving 1/2 for topping)
3/4 cup(s) panko bread crumbs

CHICKEN OR TURKEY TETRAZZINI

Sometimes we just need simple. Good use for leftovers, kid friendly, fast and easy, freezable and delicious. Beat that. (Note: Can sub tuna, drained.) Oh, don't leave out the parmesan. It makes the dish.

Steps:

  • Preheat oven 350 degrees and grease a 2 quart baking dish.
  • In a microwaveable safe bowl, cover and cook the onion and optional bellpepper until tender; about 3-5 minutes.
  • Combine all remaining ingredients with the onion/bellpepper mixture, except 1/4 cup cheddar cheese. That includes the chicken or turkey, spaghetti, cream of mushroom soup, 1 1/4 cup cheddar cheese, Parmesan, milk, mushrooms, bacon, garlic powder, salt and pepper.
  • Turn into the prepared baking dish. Sprinkle additional 1/4 cup cheddar on top and bake about 30 minutes or until bubbly.

1 1/2-2 cups cooked chicken or 1 1/2-2 cups turkey, diced

Steps:

  • Preheat the oven to 450 degrees F.
  • Spread 1 tablespoon of butter over a 13 by 9 by 2-inch baking dish. Melt 1 tablespoon each of butter and oil in a deep large nonstick frying pan over medium-high heat. Sprinkle the chicken with 1/2 teaspoon each of salt and pepper. Add the chicken to the hot pan and cook until pale golden and just cooked through, about 4 minutes per side. Transfer the chicken to a plate to cool slightly. Coarsely shred the chicken into bite-size pieces and into a large bowl.
  • Meanwhile, add 1 tablespoon each of butter and oil to the same pan. Add the mushrooms and saute over medium-high heat until the liquid from the mushrooms evaporates and the mushrooms become pale golden, about 12 minutes. Add the onion, garlic, and thyme, and saute until the onion is translucent, about 8 minutes. Add the wine and simmer until it evaporates, about 2 minutes. Transfer the mushroom mixture to the bowl with the chicken.
  • Melt 3 more tablespoons butter in the same pan over medium-low heat. Add the flour and whisk for 2 minutes. Whisk in the milk, cream, broth, nutmeg, remaining 1 3/4 teaspoons salt, and remaining 3/4 teaspoon pepper. Increase the heat to high. Cover and bring to a boil. Simmer, uncovered, until the sauce thickens slightly, whisking often, about 10 minutes.
  • Bring a large pot of salted water to a boil. Add the linguine and cook until it is tender but still firm to the bite, stirring occasionally, about 9 minutes. Drain. Add the linguine, sauce, peas, and parsley to the chicken mixture. Toss until the sauce coats the pasta and the mixture is well blended.
  • Transfer the pasta mixture to the prepared baking dish. Stir the cheese and breadcrumbs in a small bowl to blend. Sprinkle the cheese mixture over the pasta. Dot with the remaining 3 tablespoons of butter. Bake, uncovered, until golden brown on top and the sauce bubbles, about 25 minutes.

CHICKEN OR TURKEY TETRAZZINI

This is my version of my husband's favorite casserole. It is a great way to use up the leftovers from the holiday turkey. You can also use the meat from the ready to eat rotisserie chickens availabe in grocery stores. Traditionally my mother-in-law cooked the chickens in a large stock pot with vegetables and poultry seasoning and picked the meat from the bones for the casserole and used the stock for soups.

Steps:

  • Turn on overn to 350 degrees.
  • Melt butter in large skillet. Saute mushrooms 5 minutes until liquid has evaporated and add shallots. Saute 2 to 3 minutes. Stir in flour, parsley, salt and pepper.
  • Gradually add the cream and 1 cup of the chicken broth, Cook and stir over medium heat until thickened. Add chicken and stir well, if seems too thick (it should be the consistency of a light cream sauce) add more broth. Stir in parmesan cheese.
  • Mix spagetti noodles with oil and place in a 2 1/2 quart casserole or lasagna pan. Top with chichen mixture. Bake covered for 40 minutes,.
  • Remove cover and top with 1/2 cup parmesan cheese. Bake an additional 20-30 minutes until hot and bubbly.

  • Cook pasta according to package directions. In a large saucepan, melt butter over medium heat. Stir in the flour, salt, pepper and cayenne until smooth. Gradually add broth. Steps:

  • Set a large pot of water over high heat and add 2 teaspoons salt. In a large (14-inch) skillet, melt 2 tablespoons butter over medium heat. Add onion, garlic, mushrooms, red pepper, 1 teaspoon salt, nutmeg, and paprika; cook, stirring often, until vegetables soften, 8 to 10 minutes. Reduce heat to medium-low and continue cooking until golden brown, about 10 more minutes. Using a slotted spoon, transfer vegetables to a bowl and set aside.
  • Once water is boiling, add egg noodles. Cook according to package instructions until tender. Drain and set aside, covered
  • Meanwhile, melt remaining butter in skillet over medium heat. Add flour and cook, stirring until mixture looks glossy, about 3 minutes. Add broth and sherry in a slow stream, whisking as you go.
