CREAMY CILANTRO SALAD DRESSING

This is my best take on the dressing that is used in the El Torito restaurants in southern California. Be sure to toss some roasted pepitas and crumbled Cotija or Manchengo cheese on top of your salad for the full effect!

Creamy Cilantro Salad Dressing image

Steps:

  • Blend mayonnaise, canola oil, pumpkin seeds, water, vinegar, Cotija cheese, roasted chile peppers, garlic, salt, and pepper in a blender until smooth, about 1 minutes. Add cilantro in batches, blending each to incorporate completely before adding the next, 30 to 60 seconds per batch.
  • Pour dressing into an air-tight container and refrigerate at least 1 hour before serving.

1 ½ cups mayonnaise
¾ cup canola oil
⅓ cup toasted pumpkin seeds
¼ cup distilled water
¼ cup red wine vinegar
¼ cup crumbled Cotija cheese
2 roasted Anaheim chile peppers

Poblano Chile and Pumpkin Seed Stuffing image

Steps:

  • Lay chiles on their sides on racks of gas burners and turn flames on moderately high. (Or arrange chiles on rack of a broiler pan about 2 inches from heat.) Roast chiles, turning with tongs, until skins are blackened, 5 to 8 minutes.
  • Transfer to a bowl, then cover and let steam 10 minutes. Peel chiles and discard seeds, ribs, and stems, then coarsely chop.
  • Preheat oven to 325°F.
  • Cook chiles, onion, garlic, cumin, salt, and oregano in 1 1/4 sticks butter in a large heavy skillet over moderate heat, stirring, until onion is slightly softened, about 5 minutes. Add cream and simmer, stirring, 1 minute. Transfer mixture to a large bowl and toss with corn bread crumbs.
  • Toast pumpkin seeds in cleaned skillet over moderate heat, stirring constantly, until puffed, 5 to 8 minutes (seeds will pop as they puff). Remove from heat and stir in remaining 1/2 tablespoon butter and salt to taste. Add to corn bread mixture with cilantro and drizzle with broth, tossing to combine. (Use 1 1/2 cups broth if you like a moist stuffing, 1 cup if you prefer it drier.)
  • Transfer stuffing to a buttered 3-quart shallow baking dish. Cover with foil and bake in middle of oven 30 minutes, then uncover and bake until top is crisp and stuffing is heated through, about 30 minutes more.

3 cups chopped white onion
1 1/2 tablespoons finely chopped garlic

2 teaspoons kosher salt
1 1/2 teaspoons dried oregano (preferably Mexican), crumbled
1 1/4 sticks (10 tablespoons) plus 1/2 tablespoon unsalted butter
3/4 cup heavy cream
2 (8-oz) packages dry corn bread stuffing
3/4 cup (hulled) green pumpkin seeds
1/3 cup chopped fresh cilantro
1 to 1 1/2 cups chicken broth

Green Bean Salad with Pumpkin Seed Dressing image

Steps:

  • Toast pumpkin seeds in a dry small heavy skillet over moderately low heat, stirring frequently, until puffed but not browned, about 6 minutes. (If using pine nuts, toast until pale golden, about 7 minutes.) Transfer to a plate to cool. Reserve 1 tablespoon seeds, then purée remaining seeds in a blender with garlic, oil, water, lemon juice, cumin, salt, and 1 tablespoon cilantro until smooth.
  • Cook beans in a large pot of boiling salted water until just tender, 4 to 6 minutes. Drain in a colander, then plunge into a bowl of ice and cold water to stop cooking. Drain beans and pat dry.
  • Arrange beans on a plate and drizzle with two thirds of dressing. Top with tomatoes and remaining dressing, then sprinkle with remaining tablespoon cilantro and reserved pumpkin seeds.

2 small tomatoes (1/2 lb total), halved, seeded, and cut lengthwise into 1/4-inch-wide strips
