- In a 3-qt. slow cooker, toss apples and pears with lemon juice. Mix brown sugar, maple syrup, butter and cornstarch; pour over fruit. Stir in pecans, raisins and cinnamon sticks., Cook, covered, on low until fruit is tender, 3-4 hours. Discard cinnamon sticks. Serve with cake or ice cream.

- Place 1 tablespoon of the apple juice and all the cornstarch in a small bowl, stir to mix, and set aside.
- Place the light brown sugar, cinnamon, and salt in a 2-quart pot, and stir to mix well. Add the remaining apple juice, and stir to mix well.
- Add the apples to the pot, and bring to a boil over medium high heat. Reduce the heat to medium low, cover, and simmer, stirring occasionally, for about 5 minutes or until the apples are tender.
- Stir the cornstarch mixture and add it to the pot. Cook and stir for another minute or two or until thickened and bubbly. Serve warm over pancakes, french toast, or waffles, or use as a topping for ice cream.

- To make the cinnamon sugar topping: in a small bowl, mix together the 1/2 cup sugar and 1 teaspoon cinnamon; set aside.
- To make the cake: In a small mixing bowl, sift together the flour, baking powder, and salt; set aside.
- In a larger mixing bowl, beat together the oil, sugar, and eggs, using an electric mixer on medium speed; beat for about 3 minutes or until light and thick.
- Add the dry ingredients to the egg/sugar/oil mixture in three parts, alternating with the milk and vanilla, beating after each addition until smooth.
- In another bowl, toss the apples with half the cinnamon-sugar topping; then stir half the apples into the batter.
- Pour the batter into a greased and lightly floured 10-inch tube pan.
- Drop the remaining apples on top of the batter and sprinkle with the remaining cinnamon sugar.
- Bake in a 325 degree oven for 60-70 minutes or until a pick comes out clean.
- Let the cake cool in the pan for 1 hour.
- Remove cake from pan and cool completely on a wire rack.

- In a skillet, heat butter over medium-high heat. Add apple; cook and stir 3-4 minutes or until tender. Stir in brown sugar, maple syrup and cinnamon; cook and stir 1 minute longer. - Make the apple topping before making the waffles because they cook up so fast and the apple topping will stay warm while the waffles are cooking.
- For the caramel apple topping combine diced apples, butter, brown sugar, cinnamon, syrup, and chopped pecans in a small saucepan and cook over medium heat for about 5 to 6 minutes or until the apples are very tender. Leave in the saucepan to stay warm while the waffles cook.
- Heat waffle iron and spray with non stick cookie spray. Place 4 cinnamon rolls in the waffle iron and cook for about 1 1/2 minutes or until done. (You may need to open slightly and peek inside)
- When done remove to a plate and frost immediately.
- Spoon apple topping over the cooked waffles.

- Set oven to 400 degrees.
- Line 16 muffin tins with paper liners.
- In a large bowl, sift together flour, sugar, baking powder, 1/2 teaspoon cinnamon and salt.
- Cut in the butter with a pastry blender.
- Measure out 1/4 cup to add to topping ingredients; set aside.
- Add in the chopped apples and nuts to the flour mixture.
- In a small bowl, whisk together egg and half and half cream, then add to the flour mixture; stir JUST until combined, mixture will be lumpy.
- Spoon into muffin tins about 2/3 full.
- To the reserved 1/4 cup butter mixture add in 1 teaspoon cinnamon and 2 tablespoons brown sugar; toss to combine.
- Sprinkle the topping mixture over each muffin.
- Bake for 15-20 minutes.
