CINNAMON COOKIES-AND-CREAM MERINGUES
Steps:
- Preheat the oven to 400 degrees F.
- Distribute the sugar in an even layer on a baking sheet and bake for 8 minutes. While the sugar is baking, add the egg whites to a stand mixer with the salt.
- Once the sugar has been in the oven for 7 minutes, begin beating the whites on high. After a minute they should be foamy. With the mixer still running, gradually sprinkle in the warm sugar, cinnamon and vanilla. Once all of it has been added, beat on high until the meringue is cold, about 10 minutes.
- Reduce the oven temperature to 200 degrees F.
- Line a baking sheet with parchment. Place the crushed cookies on a plate. Using a large ice cream scoop or 2 large spoons, scoop up a big dollop of meringue and place it on the plate of cookies so that they stick to the bottom. Use a spatula to carefully transfer it to the baking sheet.
- Bake until the outsides are crunchy and the insides are still slightly soft, about 2 hours. Allow them to cool completely on the baking sheet until hard, about 30 minutes.

FAROFIAS (POACHED MERINGUES IN LEMON CUSTARD WITH CINNAMON)
Steps:
- In a deep 10- or 11-inch skillet set over moderately low heat, bring 3 cups of the milk and the lemon zest to a simmer; remove from the heat and let steep 5 minutes. Strain the milk and return to the skillet.
- Beat the egg whites to soft peaks, then add 1/2 cup of the sugar, 1 tablespoon at a time, beating all the while; continue until stiff glossy peaks form.
- Return the milk to low heat and when steam rises from the surface, drop meringue in by rounded tablespoons. (To keep meringue from sticking, dip the spoon often in hot water).
- Poach the meringues about 2 minutes in the milk, turn and poach the other side 2 minutes. With a slotted spoon, carefully transfer them to a large wet plate and reserve.
- As soon as all meringues are poached, strain the milk into a medium-size heavy saucepan and mix in the remaining sugar. Combine the remaining 1/4 cup milk with the cornstarch, whisk a little of the hot milk into this mixture, then blend into the pan and cook, stirring constantly, over moderately low heat 3 minutes or until slightly thickened.
- Beat the egg yolks lightly, whisk in a little of the hot sauce, stir back into pan and cook, stirring constantly, over low heat 2 to 3 minutes until no raw egg taste remains (do not boil or the mixture may curdle).
- Pour the hot custard into a large shallow heatproof bowl, cool 10 minutes, then float the meringues on top.
- Serve warm or well chilled, dusting the meringues with cinnamon at the last minute.

I haven't prepared this recipe yet, but it's on my list to try! The recipe didn't come with information about how much it makes, so I'm only guessing at 36 meringues.

CINNAMON MERINGUE PIE - PUREWOW
From purewow.com
Estimated Reading Time 3 mins
- Par-Bake the Crust: On a lightly floured surface, roll out the pie dough into a ¼-inch-thick round. Roll up the dough onto the rolling pin, then gently transfer it to the pie plate. Trim any excess dough so you have about 1 inch of overhang.
- Tuck the excess dough under itself all around the edge of the pie plate, then crimp as desired. Prick the base all over with a fork and then refrigerate the dough for at least 30 minutes. Position a rack in the lower third of the oven (preferably with a baking steel or stone on it) and preheat the oven to 425°F.
- Line the crust with a piece of parchment paper slightly larger than the size of the pie plate, and fill the pie with pie weights up to the top edge. Bake the pie crust until it barely starts to brown along the edge, 12 to 15 minutes. Remove the parchment and pie weights, and bake until the base is dry, about 5 minutes more. Cool completely. Reduce the oven temperature to 375°F.
- Make the Filling: In a medium bowl, whisk the sugar, flour, cinnamon and nutmeg to combine. Add the brown sugar and whisk to combine.

- Combine egg whites, sugar and vanilla bean seeds in a heat-proof bowl (I used the metal bowl of my stand mixer). Set bowl over a pot of simmering water and stir until sugar dissolves and mixture is warm (not hot), about three minutes. Add salt, cream of tartar, and cinnamon.
- Beat with a mixer on medium-high speed until stiff, glossy peaks form and meringue is mostly cool. This will take 5-7 minutes depending on your mixer.
- Fill a pastry bag (fitted with your tip of choice–or you can just cut the end off after filling) with the meringue. Pipe meringues into circular shapes about 1 3/4- to 2-inches in diameter on 2 parchment paper-lined baking sheets.
