PERFECT ICED TEA

- Hot-Brewed:
- Bring 8 cups water to a simmer; remove from the heat and add 3 tablespoons loose tea or 6 tea bags. Let steep about 4 minutes, until it's the strength you like. Strain loose tea with a fine-mesh sieve or remove the tea bags. Let cool, then transfer to a pitcher, cover and refrigerate.
- Cold-Brewed:
- Combine 8 cups cold water and 6 tablespoons loose tea or 10 tea bags in a pitcher. Cover and refrigerate 15 to 36 hours, until it's the strength you like. Strain loose tea with a fine-mesh sieve or remove the tea bags.
- Sweet Teas:
- Combine 3/4 cup each sugar and water in a saucepan and add 1 infuser, if desired. Bring to a simmer over medium heat, stirring until the sugar dissolves, then remove from the heat and let cool. Strain the infused syrup through a fine-mesh sieve (you'll get about 1 cup).
- Orange Add 6 strips zest
- Blackberries 1 cup
- Cinnamon 2 sticks
- Lavender 3 tablespoons dried
- Vanilla 1 halved bean
- Mint 3 sprigs
- Ginger 1 cup sliced
- Lemon 8 strips zest
- Nectarine 1 cup chopped
- Cucumber 2 cups chopped
CINNAMON & OUZO ICED TEA
Another simple but scrumptious recipe from the October 2005 issue of the 'Australian Good Taste' magazine article featuring recipes using ouzo. This is a prepare ahead recipe: 5 minutes preparation, no cooking, then 2 hours chilling. The chilling time is not included in the preparation and cooking times below. - Place the cardamom pods, cinnamon stick, sugar and tea bags in a large heatproof jug, add the boiling water and stir until the sugar dissolves; set aside for 3 minutes to infuse; remove the teabag and discard.
- Stir in the ouzo and place the tea in the fridge for 2 hours to chill.
- To serve: Place the ice cubes in serving glasses and pour over the chilled tea.

- Add ¼ apples to an iced tea glass
- Mash the apples and add 1 teaspoon cinnamon sticks
- Add 1 tablespoon lemon juice and 1 teaspoon apple cider vinegar to it
- Drop 1-2 black tea bags in the mixture
- Pour water in it and steep the back tea bags for 5-10 minutes and then remove them.
- Strain the iced tea and serve it chilled
- Enjoy!

DIET ICED TEA
Love Iced Tea but can't have all the sugar. This is a great tea! You may need to adjust the Splenda & Crystal Light to suit your tastes. I normally use 1/2 tub of the Crystal Light because DH doesn't love lemon.

- 1. in a large pan place tea bags and cinnamon stick and bring to a boil.
- 2. Reduce heat and simmer for 10 minutes
- 3. remove from heat and allow to steep for 30 minutes
- 4. remove cinnamon stick and pour in to a 2 qt pitcher and add other qt of water and sugar mix well and serve over ice.

Steps:
- In a medium pot, bring 8 cups of water to a boil.
- Once the water boils, add the tea bags and remove from heat.
- Let the tea steep for 4 minutes.
- Remove tea bags and let the brewed tea cool.
- Once the tea is cooled, add the orange-cinnamon syrup. Mix thoroughly. Transfer to a serving pitcher and add ice.
- Serve and enjoy!
- To Make the Syrup:.
- In a small saucepan, mix the water, orange juice and sugar. Add the cinnamon sticks and orange zest.
- Turn heat to medium-high. Stir mixture frequently until it comes to a boil.
- Once the mixture boils and the sugar has dissolved, remove saucepan from the heat.
- Allow the sugar mixture to cool. It will thicken a bit once cooled.
- Strain mixture to remove cinnamon sticks and any large pieces of orange zest.
- Add cooled sweetener to brewed tea.
SWEET ICED CINNAMON TEA
This is a recipe for tea to be made in a 3 quart Mr Coffee Iced Tea Pot. You could probably make it in a saucepan on top of the stove. You can make it as sweet and cinnamonny as you want to. It is very refreshing.

- Put the cinnamon candies in the bottom of the container/well the tea bags go in Put tea bags on top of them.
- Fill the water well of the Iced Tea Pot with water.
- If you don't want to have ice in the pitcher while tea is brewing, you can fill water well a second time.
- Turn the Iced Tea Pot on.
- As tea is brewing, make sure candies are melting.
- You might have to help them along with a fork or spoon.
- If a sweeter tea is desired, put the sugar in the 1/2 cup water and mix well to dissolve sugar.
- Pour into pitcher of tea and stir.
- Pour tea over ice in tall glasses.
- Can also be poured into a cup and heated in a microwave oven for hot tea.
