CIN'S BEER BREAD

I know there are many recipes for beer bread on JAP already...but this was my version from years ago. Since there were so many already posted I wasn't going to post mine...but, I had it posted on with one of my other recipes (Tallerine) and was asked to post it by itself...so, here it is. I have been making this Beer Bread forever, I can't even remember when it was that I first started making it. TIP(s): Sometimes I add 1-Tablespoon of garlic powder (garlic salt or garlic oil) and 1-Tablespoon of Itilian Herb Mix and blend into the flour before adding the beer. I have also blended in shredded cheeses at times. P.S. oooh...BTW, you may want to grease the loaf pan or spray some not-stick spray in it (on bottom and up the sides)...guess I forgot to tell ya that!!! The bread is not as dry as it appears in the one pic....I added another pic taken when I'd made it again.

Steps:

  • Preheat oven to 375° F
  • Mix the first 3-ingredient together with wooden spoon and pour into a bread loaf pan.
  • I melt 3 Tablespoons of butter and pour over top of the dough just before placing in oven.
  • Bake for approximately 1 hour (depending on oven, 50 minutes to 1 hour).
  • When finished baking, move to cool for 10-to-15 minutes on wire rack before removing from the loaf pan.

BEER BREAD

Thanks to a bottle of beer, this crazy-easy, one-bowl bread has the yeasty taste and texture of a traditional risen loaf but without any of the toil. It is also tender and incredibly moist. We like it served with a bowl of hearty winter stew or toasted, with butter, for breakfast.

Steps:

  • Heat oven to 375 degrees. Butter a 9-by-5-by-3-inch loaf pan and dust with cornmeal. For stovetop baking, use a heavy Dutch oven or similar pot that has been greased and dusted with cornmeal but not heated.
  • Mix flour, baking powder, salt and sugar and stir in the beer. Place batter in the pan. Oven baking will take about 35 minutes. For stovetop baking, cover the pan and place it on a heat shield over a low to medium flame and bake until a knife or cake tester comes out clean.
  • Remove from pan, drizzle with butter if desired and allow to cool completely before slicing. The bread has a texture similar to that of English muffins and tastes best toasted.

Unsalted butter, for greasing the pan
Cornmeal
3 cups all-purpose flour (see Tip)
3 teaspoons baking powder
1 teaspoon kosher salt
2 tablespoons granulated sugar
1 (12-ounce) can beer (the blander the better)
2 tablespoons unsalted butter, melted (optional)

EASY BEER BREAD

An awesome tasting and super simple recipe for beer bread. Mixes in one bowl and makes a lovely rustic and flavorful bread. So far I've only used lighter beer (Blue Moon Belgian White specifically) but am definitely going to be experimenting more with other types of beer (especially Guinness), as well as herb combinations. There's no need to let this mix rise either, perfect for when you're in a bit of time pinch. This recipe makes one standard sized loaf.

Easy Beer Bread image

Steps:

  • Preheat the oven to 350 degrees and grease one standard loaf pan.
  • Mix all dry ingredients together.
  • Slowly stir in one bottle or can of beer and the 3 tablespoons of hot water.
  • Mix until just blended, the dough will look shaggy.
  • Pour dough into greased/buttered loaf pan and bake for 1 hour at 350 degrees.
  • Let loaf cool on a rack for ten minutes or so before cutting. If you prefer a softer crust, you can wrap the loaf in cling film or put into a zip bag.

CHEESY BEER BREAD

This easy bread recipe uses beer and baking powder to leaven instead of yeast, producing a loaf with a lightly crisp crust and a beautifully soft interior. A strongly flavored cheese, like sharp Cheddar or Gruyère, complements the flavors of the beer. The brown sugar isn't absolutely necessary, but it extends the bread's shelf life, keeping the interior soft even after it's been sliced. This bread is especially lovely served warm, but is also delicious at room temperature.

Cheesy Beer Bread image

Steps:

  • Heat the oven to 375 degrees. Lightly grease a 9-by-5-inch loaf pan with nonstick spray.
  • In a large bowl, whisk the flour, brown sugar, baking powder, salt and pepper to combine. Add the cubed butter and use your hands or a pastry cutter to work the butter into the flour until you have fine crumbs.
  • Add the beer and mix until thoroughly combined. Fold in the shredded cheese. Transfer the batter into the prepared loaf pan and spread into an even layer.
  • Brush about 1/3 of the melted butter over the surface of the loaf and transfer to the oven. Bake for 20 minutes, brush with more butter, then return to the oven for another 20 minutes. Brush with the remaining butter, and return to the oven until a toothpick inserted into the center comes out clean, another 20 to 30 minutes. (The internal temperature should read at least 200 degrees on a thermometer.)
  • Cool the bread in the pan for 10 minutes, then run a small offset spatula around the edges and unmold. Cool at least 15 minutes before slicing and serving.

  • In a large bowl, mix together the sugar and flour. Add beer and continue to mix, first using a wooden spoon, then your hands. Batter will be sticky. Pour into a 9 x 5 inch greased loaf pan.

Steps:

  • Mix *powdered milk, yeast, salt, sugar, and shortening in large mixer like a Bosch; (*a Kitchen Aid is not big enough. It will handle a half recipe though.) Add warm water. Add about 4 to 5 cups flour and beat until well mixed. Add more flour slowly until dough comes away clean from the edge of the mixing bowl.
  • Allow to knead for 5 more minutes. Do not add too much flour (anywhere up to the 15 cups, but not more). Cover with greased plastic wrap and allow dough to rise. Once it has doubled in size, divide into 6 parts.
  • Form each into a log, tucking and pinching the dough underneath to make it smooth on top; (this is easily to do, if you lightly roll out the dough and roll up lengthwise, pinching together seam and tucking in the ends). Put each into a well greased loaf pan and let raise until double the size (size of a bread loaf). Bake in preheated oven at 350 dF for 30 minutes or until golden brown. Should makes 6 loaves. When done remove from oven and rub butter over tops of your fresh bread, (I take a stick of butter and rub over loaves).
  • *NOTE: You can made this bread with 'fresh milk' (it works great too). Just omit powdered milk and use '3 cups warm milk and 3 cups warm water' in the place of the 6 cups of warm water.
  • Fun bread keepers...canvas fabric outer and plastic lined. Keeps your homemade bread soft. The liner is pulled out to show you what it's like. I show some (up-above) that are taken in my kitchen that are Coffee Keepers and Pasta Keepers (I also have them for Sugar, Flour and different sizes of Bread loafs).
  • Here is showing the outer bag a bit better.
  • Baked bread again and covered top with a foil tent the last 10 minutes so it wouldn't get as browned. Tasted wonderful with Peach Jam!!!
  • Turned out verry good....love it lighter (it's great either way). Also...I used my Presto Homemade Bread Slicing Guide to slice perfect slices (I have 2..one is heavy plastic and one is made of wood).

You can even mix it in the baking pan for easy cleanup. This is sensational when served with soups or just as a snack, but don't expect it to be around very long when your family gets a taste of it!   • UPDATED NOTES: This recipe makes a very hearty bread with a crunchy, buttery crust. If you prefer a softer crust (like a traditional bread) mix the butter into the batter instead of pouring it over the top.
  • Sifting flour for bread recipes is a must-do. Most people just scoop the 1 cup measure in the flour canister and level it off. That compacts the flour and will turn your bread into a "hard biscuit" as some have described. That's because they aren't sifting their flour! If you do not have a sifter, use a spoon to spoon the flour into the 1 cup measure. Try it once the "correct" way and you will see an amazing difference in the end product.
  • I have had many email from you kind folks about using non-alcoholic beverages instead of beer. That is fine to do but I highly recommend adding a packet of Dry Active Yeast or 2 teaspoons of Bread (Machine) Yeast so that you get a proper rise.
  • The final result should be a thick, hearty and very tasteful bread, NOT A BRICK! ;).
