FRENCH FRIED CAULIFLOWER

These are so crunchy and a great way to eat your veggies.

French Fried Cauliflower image

Steps:

  • 1. Dip cauliflower into eggs; coat with cracker crumbs. Pour oil into a 1/2 inch depth heavy skillet; ( I use a cast iron and it gives a great crunch) heat oil to 375F. Fry cauliflower 3 to 5 minutes or until golen brown; drain on paper towls.

1 head cauliflower, cut into flowerets
3 eggs, beaten
1 sleeve round buttery crackers, crushed
oil for deep frying

BUTTERED FRIED PARSNIPS

Parsnips are one of the vegetables I think I ought to like; they are a locally grown vegetable, available all winter after all. But I never managed to be terribly enthusiastic about them until this recipe came along.

Buttered Fried Parsnips image

Steps:

  • Wash, trim and scrape the parsnips.
  • Cut into uniform pieces and boil in salted water, 25 to 30 minutes or until tender.
  • Drain well, and let dry.
  • Just before serving, heat the butter in a skillet and saute over moderate heat until light brown on all sides, letting the parsnips caramelize a little in their own sugar. It is best if you have a large enough pan that they can be cooked in a single layer.
  • Season with the nutmeg, salt and pepper and serve in a warm vegetable dish, garnished with parsley.

2 lbs parsnips

1 tablespoon parsley, Chopped
1/8 teaspoon nutmeg

  • Gradually beat 2/3 cup sugar into the beaten egg until light.
  • Sift together flour, baking powder and salt.
  • Add the flour mixture to the egg mixture alternately with 1/3 cup of milk.
  • Add 3 tablespoons butter and 1 teaspoon vanilla or almond extract.
  • Beat well, then fold in 1 1/2 cups fresh huckleberries.
  • Pour into an 8" cake pan and bake at 400 degrees for about 40 minutes, or until toothpick inserted in center comes out clean.

Steps:

  • In a large saucepan cover parsnips with water, cover and boil over medium-high heat until tender, about 10 minutes. Drain.
  • In a plastic bag combine flour and seasoning salt. Dip parsnips in butter and place them in the bag. Shake bag to coat parsnips with the seasoned flour.
  • Heat the butter in a large skillet over medium-high heat. When the butter starts to sizzle, add parsnips. Cook, turning occasionally, until all sides are golden brown.

  • Cream butter and sugar thoroughly.
  • Add remaining ingredients except egg whites.
  • Fold in stiffly beaten egg whites.
  • Pour into unbaked pie crust and bake slowly in oven at 350 degrees for 15 minutes.
  • Reduce oven to 300 degrees F, until tests done - about 45 minutes.

  • Add 2 sticks cut up softened butter to a mixing bowl.
  • Beat until well beaten.
  • Begin adding buttermilk slowly.
  • Beat until fluffy.
  • Scrape loose the first solid butter clinging to the bowl, then beat until there are no solid lumps in the whipped butter.
  • Serve with my hot Kentucky biscuits.
  • Store unused portion in refrigerator, tempering and whipping before serving again.

  • Sift the flours together.
  • Dissolve cake yeast in the warm water.
  • Mix all ingredients well, into a batter.
  • Set at room temperature for 1 hour.
  • Cover and place into the refrigerator overnight.
  • Stir in baking soda to the portion to be used to leaven the sourness of yeast.
  • Pour onto greased hot griddle and cook until bubbly, then flip cake over until golden brown on both sides.
  • Serve hot with my "Kentucky Whipped Butter" and pure maple syrup.
