TEX-MEX PANTRY CASSEROLE

This casserole uses basic pantry staples for a quick weeknight meal. Garnish with sour cream and sliced avocado.

Tex-Mex Pantry Casserole image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a skillet over medium-high heat. Cook and stir ground beef until browned and crumbly, about 6 minutes. Drain off any grease.
  • Add butter and onion to the skillet. Saute until onion is softened and fragrant, about 5 minutes. Sprinkle in taco seasoning and pour in tomato sauce. Stir to combine. Add broth, corn, black beans, Spanish rice mix, and salsa; mix well.
  • Spray a casserole dish with nonstick cooking spray. Pour the beef mixture into the casserole dish. Top with Cheddar cheese.
  • Bake in the preheated oven until cheese is melted and filling is bubbling, about 20 minutes.

My family has been making this casserole for decades. I'm not sure where the recipe orginated, maybe mom made it up. It is so good, a one pot meal. Throw it together and shove it in the stove:) Photos to be posted later.

Steps:

  • 1. Cut beef into serving size pieces.
  • 2. Trim off any excess fat.
  • 3. Sprinkle beef with salt and pepper.
  • 4. Place ribs into casserole.
  • 5. Brown meat in the oven, uncovered for 1 hour at 400 degrees.
  • 6. Remove casserole from oven and drain off fat.
  • 7. Add onions, parsley, celery, potatoes, horseradish, and tomatoes to casserole dish.
  • 8. Stir casserole ingredients.
  • 9. Bake an additional 1 hour at 375 degrees.
  • 10. Great with a salad....Enjoy!

3 lb lean beef short ribs
2 tsp salt
1/8 tsp pepper
1 medium onion, sliced
1 Tbsp chopped parsley
1/2 c sliced celery
2 medium potatoes, quartered
1 Tbsp prepared horseradish
2 8 oz. tomatoes sauce with tomato bits

CONNIE'S SIRLOIN CASSEROLE

Love the gravy that this recipe created. To me, the Kentucky Kernel flour always makes everything so good. After the initial preparation, this is one of those recipes that takes no attention. Your guests will be very impressed!

Connie's Sirloin Casserole image

Steps:

  • 1. Combine flour, garlic powder and Lawry's seasoning in a zip lock bag and shake it to combine.
  • 2. Add sirloin chunks and shake to cover them.
  • 3. Add olive oil to your hot cast iron skillet.
  • 4. Brown sirloin chunks in olive oil. Be sure all sides of sirloin are brown.
  • 5. Take sirloin chunks out of the cast iron skillet and place in a large casserole that has a cover (or cover later with aluminum foil).
  • 6. Add 2 cups of water to the hot pan and mix up the drippings.
  • 7. Add potatoes, carrots, wine, onion mix, and drippings into the casserole dish and cover.
  • 8. Roast at 280 degrees for 3 hours; then 1 hour at 350 degrees. You can play around with the degrees and time. This is just how I did it the first time I made it and it was amazing.
  • 9. Enjoy!

2 1/2 lb top sirloin roast chunks, bone in
1 1/2 c kentucky seasoned flour- if you can't find the kentucky brand flour, just mix 1 1/2 cup all purpose flour flour, 1 teaspoon salt, 1/2 teaspoon pepper and onion powder together.
2 Tbsp garlc powder
1 Tbsp lawry's seasoning
3 Tbsp olive oil
6 potatoes, peeled and sliced into large hunks
6 carrots, peeled and sliced into large hunks
1/2 bottle red wine, small, single size bottle
1 pkg onion soup mix
salt and pepper to taste
2 c water

PANTRY CHICKEN CASSEROLE

Using pantry items plus a couple of fresh items, you can create a cheesy, comforting casserole your whole family will love. Though it does include RO*TEL® and a can of mild green chile peppers, it's not spicy, but if you like the heat, choose hot RO*TEL® and peppers. This pantry chicken casserole reheats well, too, but I had to hide it, or there would have been no night #2! A crusty bread and a green salad complete this easy pantry meal.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a large casserole dish with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • While the pasta is cooking, melt butter in a large skillet over medium heat. Add onion and bell pepper and cook, stirring occasionally, until vegetables are tender, about 5 minutes. Add mushrooms and cook until they release their liquid, about 5 minutes. Add garlic and cook, stirring occasionally, until fragrant, about 1 minute.
  • Stir in processed cheese food, diced tomatoes and juice, diced tomatoes and green chiles with juice, and mild chile peppers. Cook and stir until cheese has melted, 5 to 10 minutes. Remove from heat and stir in cooked pasta and chicken. Pour into the prepared baking dish.
  • Bake in the preheated oven until heated through, about 20 minutes. Serve warm.

Steps:

  • Cook noodles according to pkg, rinse, drain. Brown beef in butter. Stir in tomato sauce. In med bowl, combine cottage cheese, cream cheese, sour cream, onions, peppers and beat well. Spread 1/2 of the noodles in a greased 2 qt casserole dish.Add 1/2 meat mixture on top of noodles, add 1/2 cheese mixture on top of meat. Repeat layers. Sprinkle w/ shredded cheese. Bake 305 deg for 30 min.

CONNIE'S TAMALE CASSEROLE

I've made this recipe for my family and our friends and they really liked it. Its very simple to make and warms them up on a cold day. The left overs are just as good if not better than the day you make it. Instead of using the canned tamales, I started using the fresh or frozen ones. That really makes the difference. The canned ones are a bit oily to use but you can use them. you will need to drain them and pat them dry first. We like the pork tamales but you can use either beef, or chicken. The pork just taste better to us.

  • Place tamales (WITHOUT PAPERS) in a greased or sprayed 9 x 13" pan.
  • In separate bowl combine the soup, Ro-Tel tomatoes and the green chilies,.
  • stir until well blended.
  • Pour over the tamales. Top with cheese, and the olives. Bake covered for 30 minute Then take cover off and let bake another 15 to 20 minute or until the cheese bubbles and gets a little brown on top.
