COTTAGE CHEESE GERMAN STYLE
Growing up we had a neighbor from Germany that used to make this. What makes this unusual is the preparation. I don't know what it's called, but I know she used it as a dip & a dressing. It's great as a topping for baked potatoes, or with raw veggies, good bread etc. She'd have it in the evening as a snack with her glass of wine that she put Sweet Woodruff (a flower/ground cover she grew in her garden) leaves in, (also a German tradition). This is really nice to have on hand. Her original recipe called for MSG, which I omit. You can put in any amounts of your favorite seasonings, I think she just added her favorites or whatever she was in the mood for. However the caraway seeds are a desirable flavor addition which demand that this sits a bit to soften the seeds. Otherwise, it could be used right away, or kept on hand in the fridge through the week. You can also add green onion, or anything else that strikes your fancy.

AUTHENTIC GERMAN CHEESECAKE
My mom searched for years for an authentic German cheesecake recipe, but Germans use 'quark', an ingredient not readily available in the U.S. This recipe uses cottage cheese in place of quark and makes its own crust while baking.

POLISH NOODLES (COTTAGE CHEESE AND NOODLES)
This simple recipe came from the Polish side of my family. We simply called it 'cottage cheese and noodles' or 'lazy man pierogies.' It's a great comfort food and can be made with any kind of noodle. It could be a side dish, but we always enjoyed it as a meal.

GERMAN LASAGNA
Sausage and sauerkraut are a palate-pleasing pair, especially in lasagna. My family was a little skeptical when I first served this unusual dish. But in no time, they were clamoring for second helpings. -Naomi Hochstetler, Woodburn, Indiana

AUTHENTIC GERMAN/AMISH CUSTARD CHEESE PIE
This is an easy to make, light custard pie from my husbands grandmother. Use either a graham cracker crust or a pastry crust-either tastes great. I use a deep dish pastry pie crust. This pie tastes better the next day since it give the flavors time to marry and set. Chocolate curls/whipped cream/cool whip can be added before...
