ZUCCHINI PATTIES

These cheesy zucchini patties are an excellent way to use up that abundance of zucchini from the garden. Serve with a bit of tomato sauce or sour cream dabbed on top.

Steps:

  • In a medium bowl, combine the zucchini, eggs, onion, flour, Parmesan cheese, mozzarella cheese, and salt. Stir well enough to distribute ingredients evenly.
  • Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden.

Steps:

  • In a bowl, combine the grated courgette, flour and parmesan. Shape into walnut-size balls, then flatten.
  • Heat a non-stick frying pan over a medium heat and add the oil. Fry the fritters for 2-3 mins on each side until golden brown. Serve straight away with red pepper hummus.

COURGETTE PATTIES

These were vaguely meant to be courgette fritters, I didn't have any feta so used some cream cheese I had instead - they are quite soft, almost blini-like. Great served with tzatziki. I used mint as I had some, I'd swap that for dill or maybe chives? The courgette I had was quite a large one, use more than one if your courgettes are smaller.

Steps:

  • Stir everything together to make a batter.
  • Heat a non-stick frying pan or griddle.
  • Plop spoonfuls of the mixture onto the hot pan and flatten slightly - mine were about 3 inches (8cm) across. (You'll probably need to do two batches.).
  • Cook for 4 or so minutes without disturbing, then flip to cook other side - should be nicely browned.

Steps:

  • Preheat the oven to 300 degrees F.
  • Grate the zucchini into a bowl using the large grating side of a box grater. Immediately stir in the onion and eggs. Stir in 6 tablespoons of the flour, the baking powder, salt, and pepper. (If the batter gets too thin from the liquid in the zucchini, add the remaining 2 tablespoons of flour.)
  • Heat a large (10 to 12-inch) saute pan over medium heat and melt 1/2 tablespoon butter and 1/2 tablespoon oil together in the pan. When the butter is hot but not smoking, lower the heat to medium-low and drop heaping soup spoons of batter into the pan. Cook the pancakes about 2 minutes on each side, until browned. Place the pancakes on a sheet pan and keep warm in the oven. Wipe out the pan with a dry paper towel, add more butter and oil to the pan, and continue to fry the pancakes until all the batter is used. The pancakes can stay warm in the oven for up to 30 minutes. Serve hot.

Steps:

  • Tip flour into a bowl. Make a well in the centre, break in eggs, then gradually whisk together, adding milk, a little at a time, to make a smooth batter. Stir in courgette and season well. Heat oil in a non-stick frying pan. Add tablespoons of mixture to make fritters, and cook for 2-3 mins on each side until lightly golden. Serve with sweet chilli sauce.

  • Combine Bisquick, cheese, salt, eggs, zucchini and onion in a mixing bowl.
  • Blend well. Melt butter in a large skillet.
  • Spoon heaping tablespoons of zucchini mixture into skillet.
  • Fry for 3 to 5 minutes per side, until golden brown.
  • Place browned patties on a paper towel.
  • Add more butter to skillet when necessary for additional batches.

Steps:

  • Preheat oven to 350* After grating zucchini, squeeze out as much liquid as possible with hands.
  • Combine zucchini, onion, parsley, cheese and 1 cup bread crumbs with salt, pepper and eggs.
  • Shape into patties and cover with fine bread crumbs.
  • Place on well greased cookie sheet and brush with melted butter.
  • Bake for 30-40 minutes or until golden brown.

  • Grate the courgettes into a colander, sprinkle evenly with salt (I used about 1 teaspoon) and toss to combine. Leave to drain (put a bowl under the colander or leave it in the sink) for about an hour. The courgettes are probably useable in less time than this if you're in a rush, but I like to leave them as long as possible. When ready, pile half the courgette into the middle of a clean tea towel and twist the towel around the courgette to squeeze out as much water as possible (read more about this technique here).
  • Preheat the oven to 200c. Transfer the courgettes to a bowl and add the rest of the ingredients. Mix thoroughly to fully combine (few chunks of feta is okay).
  • Shape the mixture into balls or patties and place on a non-stick baking tray. The size you choose will depend on what you use them for. They are great as nibbles, beginning or accompanying a full meal, but they also make an awesome veggie burger for which you will probably need to make them larger.
  • Bake for about an hour, until they are brown all over, turning once about halfway. Exact timing will depend on the size of your fritters and your oven.
