CRAB ON CRACKERS HORS D'OEUVRES WITH A TWIST
This hors d'Oeuvre is relatively easy to produce, and makes a great way to keep your guests happy while waiting for the main event. And with only six ingredients, it's a snap to put together. Steps:
- 1. Gather all your ingredients
- 2. Sauté the bacon until crisp, but not too crisp
- 3. Remove from pan and allow to drain and cool on some paper towels
- 4. Chef's Note: Reserve the bacon grease for another use (I'm planning on sautéing a couple of chicken breasts with it... but that's another recipe).
- 5. Chop the bacon into small pieces and reserve.
- 6. Add the mayo, lemon juice, salt & pepper (to taste), and the cayenne pepper to a bowl, and mix thoroughly.
- 7. Carefully fold in the crab until fully incorporated.
- 8. Place a heaping teaspoon of the crab mixture on a cracker, and add a few pieces of chopped bacon.
- 9. Cover with a piece of the cheese, and place in a broiler and broil until the cheese bubbles and begins to brown.
- 10. Serve with a lemon or lime wedge. Enjoy.
- 11. Keep the faith and keep cooking.

Steps:
- Thaw (if needed) and drain crabmeat.
- Blend softened cream cheese, chives,garlic powder and salt.
- Fold in crabmeat.
- Shape into a ball or log.
- Roll in pecans or parsley.
- Wrap in plastic wrap and chill.
- When ready to serve, unwrap and place on a serving dish.
- Let come to room temperature and serve with buttery crackers or fresh veggies.

CRAB CAKE BITES
These appetizer bites are a mini way to enjoy crab cakes for your next gathering. Crab, fresh chives and spices are folded into bread crumbs, shaped and baked for the perfect bite. Serve with lemon-garlic sauce for dipping.

- Heat oven to 400°F. Line large cookie sheet with cooking parchment paper.
- In medium bowl, stir together 1/2 cup mayonnaise, the egg, chives, Worcestershire sauce, 1 teaspoon Dijon mustard, seafood seasoning and 1 teaspoon lemon juice. Fold in crabmeat and bread crumbs until well blended (mixture will be moist). Using measuring tablespoon, shape mixture into 36 (1 1/2-inch) balls. Place on cookie sheet.
- Bake 16 to 20 minutes or until lightly browned and hot in center. Cool 5 minutes.
- Meanwhile, in small bowl, stir together Lemon-Garlic Sauce ingredients until blended. Serve bites with sauce and lemon wedges.

- Whisk together eggs, celery, onion, parsley, mayonnaise, mustard, Worcestershire sauce, and Old Bay seasoning in a large bowl until well combined. Fold in crabmeat and panko using a rubber spatula until well combined. Cover crab mixture, and chill at least 1 hour or up to 8 hours.
- Preheat oven to 250°F. Coat a baking sheet with cooking spray. Shape crab mixture into 12 (3-inch) round cakes (about ¼ cup each) on prepared baking sheet. If crab cakes are not holding together, rechill about 30 minutes to set.
- Heat 2 tablespoons of the oil in a large nonstick skillet over medium. Add 6 of the crab cakes, and cook until golden, 2 to 4 minutes per side. Transfer crab cakes to a rimmed baking sheet lined with paper towels. Turn off preheated oven, and place baking sheet with cooked crab cakes inside to keep warm. Repeat process with remaining oil and crab cakes. Serve immediately with Old Bay Mayo and lemon wedges
