CRABMEAT BISQUE MADE EASY

This is not a thick soup, yet it is creamy and so smooth to the palette. The aroma when cooking makes you want some before the potatoes are soft. I have made modifications due to allergy to corn (such as rice flour). I allow mine to slow-simmer with lid slightly ajar. Stir often so the film does not form on top. I have doubled my batch and still never have any for the freezer.

Crabmeat Bisque Made Easy image

Steps:

  • Spray a stockpot with cooking spray.
  • Melt butter in the prepared stockpot over medium heat; cook and stir celery, onion, paprika, seafood seasoning, thyme, salt, and white pepper until onion is translucent, about 5 minutes. Whisk flour into vegetable mixture until smooth and dissolved. Pour seafood stock over vegetable mixture.
  • Mix half-and-half, cream, and milk into broth mixture; decrease heat and simmer until bisque is thickened, about 15 minutes. Add crabmeat and simmer bisque until crabmeat is heated through, about 5 minutes more.

Steps:

  • Put shells into food processor and grind 10 seconds. Scrape into a saucepan with bay leaf and water. Bring to a boil, then lower to simmer. After 45 minutes, strain into a clean large saucepan. Reserve 1/2 cup for boulettes. Bring remaining stock to a simmer. In a saucepan, make a roux, stirring constantly, with flour and vegetable oil. When it's a medium-dark, old-penny color, remove pan from heat and add onions, bell pepper, garlic and parsley. Cook, stirring until vegetables soften. Stir in tomato sauce, salt, cayenne and about 1/2 cup crab stock. Stir until crab stock disappears. Add roux mixture to the simmering crab stock. Whisk until blended. Cover pan and keep on lowest heat setting. Make boulettes: In a large skillet over medium heat, heat 3 tablespoons butter until bubbling. Add onions, celery, bell pepper and garlic; cook until vegetables soften. Stir in Worcestershire, peppers, salt, thyme and lemon juice. Cook, stirring, until ingredients are combined. Wet bread cubes with reserved crab stock. Add them and half reserved crabmeat to the pan. Stir until well-mixed and the mixture looks noticeably drier. Lower heat and cool 5 minutes. Stir green onions and parsley into crabmeat mixture. With a round soup spoon, scoop balls of the crabmeat mixture about 1 inch in diameter. Roll gently with hands to make them uniform. Heat 3 tablespoons butter in a skillet over medium heat until it bubbles. Add crab balls, a few at a time, and roll them around until browned all over. (Or bake about 15 minutes in a 375-degree oven.) Check seasoning of the crab bisque and add salt, pepper or Tabasco to taste. Add reserved crabmeat. Let it simmer 1 or 2 more minutes, then ladle bisque into bowls or cups. Drop 1 or 2 crab boulettes into each bowl at the table. 1 cup flour
1/2 cup vegetable oil
1 cup chopped onion
1/2 green bell pepper, chopped
2 cloves garlic, chopped
6 sprigs flat-leaf parsley, chopped
1/2 cup tomato sauce
1/2 teaspoon salt
1/8 teaspoon cayenne
Crab boulettes
6 tablespoons butter
1 cup chopped onions
1 rib celery, chopped
1/2 bell pepper, chopped
2 cloves garlic, chopped
1 tablespoon Worcestershire sauce
1 teaspoon black pepper
1/4 teaspoon cayenne
1/2 teaspoon salt
1/4 teaspoon thyme
2 tablespoons lemon juice
6 inches stale po-boy bread, cubed, with crumbs
2 green onions, thinly sliced
Leaves of 10 sprigs flat-leaf parsley, chopped

Crawfish Bisque with Crawfish Boulettes image

Steps:

  • For the crawfish stock: Remove the tails from the 5 pounds of boiled crawfish and peel, reserving the tail meat for the bisque and the peelings for the stock. Pinch off the claws and reserve. Put the tail peelings and claws in a stockpot and cover with the water. Bring to a boil. Simmer, uncovered for 45 minutes. Drain. You should have about 3 quarts of stock. Let the stock cool.
  • For the bisque: Combine the oil and flour in a large cast iron or enameled cast iron Dutch oven over medium heat. Stirring slowly and constantly for 20 to 25 minutes, make a medium brown roux, the color of peanut butter. Add 3 cups of the onions, 1 1/2 cups bell peppers, and 1 1/2 cups celery. Season with salt, pepper, cayenne, and bay leaf. Cook, stirring often, for 6 to 7 minutes, or until the vegetables are soft. Add the reserved crawfish tails. Stir and cook for 3 to 4 minutes. Add the crawfish stock and bring to a boil. Simmer over medium heat, uncovered, for about 1 hour and 15 minutes. Add 1/4 cup of the green onions and the parsley.
  • For the boulettes: In a food processor with a metal blade, combine the remaining onions, peppers, celery, garlic, 1 pound peeled crawfish tails, bread pieces and egg together. Pulse the mixture a few times to finely chop the mixture. *Do not puree. Transfer the mixture to a mixing bowl and stir in the remaining green onions and parsley. Season with salt, pepper, and cayenne. Shape the mixture into small balls, about 1 tablespoon each. Season the bread crumbs with the Rustic Rub. Roll the balls in the seasoned bread crumbs. When the oil has reached 360 degrees F, deep-fry the boulettes until golden brown, about 2 minutes. Remove the boulettes from the oil and drain on a paper-lined plate. Season with Rustic Rub. Garnish each soup with a couple of the boulettes.
  • Combine all ingredients and store in an air-tight container.

Decadent and Easy Crab Bisque image

Steps:

  • Saute onion in the butter, over medium heat, until translucent.
  • Add 2 T. of the flour to the onions, mixing well with a wooden spoon. Cook for about a minute.
  • Add 3 cups of the half-and-half, heavy cream, salt and pepper. Whisk while bringing up to a boil (you can turn up the heat a bit here - just be careful not to scald the cream).
  • Shake 2 T. of the flour and 1 cup of the half-and-half - using a jar with a lid. Shake until the flour is blended well.
  • Add to the soup by whisking. Keep whisking until the soup thickens.
  • Stir in the crab and cook for about 5 more minutes.
  • Ladle the soup into the bowls and garnish with snipped chives, if desired.

  • In a Dutch oven, saute the onions, celery and green pepper in margarine until tender. Add garlic; cook 1 minute longer. Reduce heat to medium; add the potatoes and milk. Steps:

  • If using live crabs, add to pot of boiling water using tongs. Cover pot and cook over high heat until crab shells are red, 5 to 6 minutes. Drain crabs in a colander.
  • Put crabs (cooked or frozen uncooked) into a large metal roasting pan. Cover with a clean kitchen towel and pound shells with meat pounder to crush (including claws).
  • Heat butter and oil in same pot over medium-high heat until foam subsides, then cook onion, carrot, celery, and garlic with bay leaf, thyme, clove, peppercorns, and 1/2 teaspoon salt, stirring occasionally, until softened, about 5 minutes. Add Cognac, wine, and crushed crabs and bring to a boil. Add broth and water and return to a boil. Skim foam, then simmer, covered, stirring and skimming occasionally, 1 hour.
  • Put colander in a large bowl, then drain crab broth, reserving solids for crab butter (if making). Transfer broth to a medium saucepan.
  • Ladle out 2 cups broth and transfer to a 1-quart saucepan. Add rice and simmer, covered, until very tender, 15 to 20 minutes (not all of liquid will be absorbed).
  • Blend together rice with cooking liquid and 1 cup more crab broth in a blender until smooth (use caution when blending hot liquids), then add to remaining broth in medium saucepan.
  • Just before serving, reheat bisque over medium heat until hot, then stir in tarragon, lemon juice, cayenne, and 1/8 teaspoon pepper.
  • Ladle bisque into bowls and spoon a little crabmeat into center, then drizzle with some of crab butter (if making).
