Corn Casserole with Crackers image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Heat oil in a skillet over medium heat; stir in onion and celery. Saute until the onion has softened and turned translucent, about 5 minutes. Season with salt and pepper, if desired. Transfer to a large bowl with whole-kernel corn, creamed corn, and crushed crackers.
  • Whisk together eggs and milk in a small bowl and add to the corn mixture. Add butter, pepper, and salt; mix until all ingredients are incorporated. Pour into the prepared baking dish.
  • Bake in the preheated oven until edges are golden brown, 45 to 60 minutes. Let cool for 5 to 10 minutes before serving.

Cracker Corn Pudding image

Steps:

  • 1. Preheat oven to 325. Grease 13 X 9 pan.
  • 2. Beat eggs slightly in a large bowl.. Stir in whole kernel corn (do not drain) and cream-style corn. Add evaporated milk, onion, butter, salt and pepper. Fold in crackers and shredded cheese. Pour into baking dish. Bake 1 hour or until set. Let stand a few minutes and enjoy!

Old-Fashioned Scalloped Corn image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter one 8x11x2 inch casserole dish.
  • In a medium sized mixing bowl, combine the creamed corn, eggs, 1/4 cup of the melted butter and 1/2 of the cracker crumbs. Pour mixture in into the prepared dish.
  • In a small bowl, mix the remaining melted butter, cracker crumbs, paprika and pepper. Sprinkle crumb topping over the casserole.
  • Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, until topping browns slightly and corn is bubbly around the edges.

Steps:

  • Beat egg yolks and sugar together in a bowl with an electric mixer until fluffy and pale yellow, 1 to 3 minutes. Heat milk in a large saucepan over medium heat, and whisk in the egg yolk mixture until smooth; boil for 1 minute. Mix in the coconut and cracker crumbs; bring to boil, reduce heat to low, and simmer the mixture until thick, about 5 minutes.
  • Beat the egg whites in a glass or metal mixing bowl with an electric mixer until they hold stiff peaks; gently fold into the coconut mixture, and mix in the vanilla extract. Serve warm or cold. Refrigerate leftovers.

Mississippi Corn Pudding image

Steps:

  • Set a rack in the lower third of the oven. Preheat the oven to 350°F. Grease a 9 by 13-inch casserole dish with butter, making sure to get in all the corners and sides of the dish.
  • In a medium bowl, whisk together the eggs and sugar until well combined. Add the melted butter, milk, heavy cream, and sour cream and whisk to incorporate.
  • In a large bowl, whisk together the flour, cornmeal, salt, pepper, paprika, and baking soda.
  • Using a spatula, fold the wet ingredients, 1 cup at a time, into the dry ingredients until well combined.
  • Fold in the onion, celery, corn, and cheese.

Steps:

  • Crush the Ritz crackers close to a powder consistency.
  • Add the melted butter to crackers and mix with hands until crumbly.
  • Spread half of cracker mixture on bottom of a square casserole dish, pressing down with fingers to make a crust.
  • Heat creamed corn on stove until warm throughout.
  • Add eggs and stir until combined.
  • Mix flour with just enough milk to make a thick paste.
  • Add flour paste to corn mixture.
  • Stir well and heat throughout.
  • Pour into casserole dish.
  • Bake 30 minutes at 400 or until firm.
  • Add remaining crackers to form a top crust and bake additional 10 minutes.

Steps:

  • Crush crackers into crumbs.
  • Pour melted margarine into crumbs add sugar, and mix until moistened, save some for top of pudding just for garnish.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium bowl, mix butter, brown sugar, and 2/3 of the crushed graham crackers. Press lightly into the bottom of a 9x13 inch baking dish.
