ACORN SQUASH WITH CRANBERRY STUFFING

Acorn Squash with Cranberry Stuffing image

Steps:

  • Cut squash in half; discard seeds. Cut a thin slice from the bottom of squash halves so they sit flat. Place squash hollow side down in an ungreased 13x9-in. baking dish. Add 1/2 in. water. Cover and bake at 375° for 45 minutes. , Meanwhile, in a small skillet, saute celery and onion in butter until tender. Add the apple, salt, lemon juice and pepper. Cook, uncovered, over medium-low heat until apple is tender, stirring occasionally. Stir in the cranberries, sugar and water. Cook and stir until berries pop and liquid is syrupy. , Turn squash halves over; fill with cranberry mixture. Cover and bake 10-15 minutes longer or until squash is tender.

CRANBERRY STUFFED ACORN SQUASH

From a Cranberry Cookbook put out by the Westport-Grayland Washington Chamber of Commerce. (The Cranberry Coast) NOTE: Everyone said this made too much filling for 1 squash, so I changed the recipe to 2 squashes, to serve 4. Easy to halve for 2 servings. Microwave instructions included at end of regular instructions.

Cranberry Stuffed Acorn Squash image

Steps:

  • Preheat oven to 350°F.
  • Coat a baking sheet with non-stick cooking spray.
  • Cut squash in half; remove seeds and fibers. Place cut side down on baking sheet and bake about 1 hour.
  • Combine cranberries, 1/2 cup apple juice, sugar, cloves and nutmeg. Cook over low heat until cranberry skins pop.
  • Combine remaining apple juice with cornstarch, mixing well. Gradually stir into cranberry mixture. Heat just until thickened.
  • Spoon cranberry mixture into squash halves and sprinkle with chopped walnuts. Return to oven and bake until heated through, about 20 minutes.
  • To microwave: Cover squash halves with plastic wrap. Microwave on 100% power 12-18 minutes, until soft to touch.
  • Cook cranberry mixture on 100% power 8-12 minutes, stirring once or twice.
  • Fill squash halves and heat in oven as above, or microwave until heated through.

Cranberry-Pecan Microwave Acorn Squash image

Steps:

  • Pierce each squash in several places to allow steam to escape, then place 2 inches apart in the microwave. Microwave on high for 6 minutes. Remove to a cutting board.
  • Cut each squash in half crosswise; remove and discard seeds. Arrange halves with cut-sides down on a microwave-safe plate.
  • Cover tightly with plastic wrap and microwave until tender, 7 to 9 minutes. Remove stems and cut a thin slice from the pointed ends to prevent tipping. Flip so cut-sides are facing up.
  • Mix graham cracker crumbs, pecans, butter, brown sugar, and nutmeg in a bowl. Spoon 1/4 of the mixture into each squash half.
  • Microwave, uncovered, until filling is heated through, 2 to 5 minutes.
  • Serve topped with cranberry sauce.

I find any excuse possible to serve this. Great around the holidays but worthy of being made all year round. It is the dish I am most often asked to bring to a gathering requiring finger foods or appetizers. Really good on Townhouse Wheat Crackers. If I don't have any orange juice concentrate, I use just enough fresh squeezed juice to make it the right consistency and the zest from the orange for more flavor. *PLEASE NOTE!!* You REALLY need to make this ahead of time! The flavors must blend for it to taste good!

Vegan Acorn Squash Burgers With Cranberries and Pecans image

Steps:

  • Preheat oven to 425 degrees Fahrenheit. Halve squash lengthwise, scoop out seeds and discard. Spray or lightly rub the insides of the squash with oil and season lightly with salt and pepper. Set squash halves, scooped sides down, on a parchment-lined, rimmed baking sheet. Bake for 25 to 35 minutes, until soft and skin is easily pierced with a fork.
  • Allow squash to cool slightly and then scoop flesh out from skin and into a fine mesh strainer. Gently press squash to squeeze out excess liquid and allow to drain for 30 minutes. Combine the ground flax seeds and water in a small bowl and allow to rest for 5 minutes to bloom. Reduce oven heat to 350 degrees.
  • Heat 3 tablespoons of olive oil over medium heat and add onions. Cook, stirring frequently, until golden brown and caramelized, about 20 to 25 minutes. Season with salt and freshly ground pepper.
  • Combine the squash, caramelized onions, bloomed flax and remaining ingredients in a large bowl. Mix well. Use a ⅓ cup measuring cup to form patties. Drop onto a parchment lined baking sheet and cook for 20 minutes. Flip patties and continue to cook another 15 to 20 minutes, until firm to the touch and beginning to lightly brown.
