CREAMED CUCUMBERS

We moved here about 3 years ago and we love our home in the country. We plant a garden each year, making sure there's always plenty of cucumbers. I must admit I never really cared for cukes until my mother-in-law prepared them this way. Now they're one of my favorite vegetables.

Creamed Cucumbers image

Steps:

  • Combine cucumbers and green onions in a large bowl. Cover and let stand for 1 hour. Combine all remaining ingredients; pour over cucumber mixture and mix well. Refrigerate for several hours.

5 cucumbers, peeled and thinly sliced
1 bunch green onions with tops, chopped
1 cup mayonnaise
1/4 cup evaporated milk
1/4 cup vinegar
1/4 cup sugar
2 drops hot pepper sauce
1 teaspoon dried parsley flakes
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic salt
1/4 teaspoon onion salt

This is the only recipe I can think of that my mother and grandmother use to make.

Creamed Cucumber Slices image

Steps:

  • In a bowl, mix the mayonnaise, milk, sugar, and vinegar until smooth. Place cucumber slices in the bowl, and toss to coat with the dressing. Season with salt and pepper. Chill 30 minutes in the refrigerator before serving.

Steps:

  • In a bowl, combine cucumbers, onion, water and salt. Let stand for 1 hour; drain and rinse. In a serving bowl, beat cream, sugar and vinegar. Add cucumbers and onion; toss gently. Sprinkle with parsley if desired.

Steps:

  • Peel and slice cucumbers thin.
  • Vertically slice onions thin into 1-1/2 " long slices.
  • Put onions and cucumbers into a bowl, sprinkle with salt and toss to coat.
  • Let mixture drain in a colander over a bowl for about an hour.
  • Mix sour cream, mayonnaise, Splenda, Vinegar, and dill weed or chives together and pour over cucumbers and onions.
  • Stir together thoroughly, and refrigerate for at least an hour.

Steps:

  • Peel Cucumbers and scoop out seeds with a spoon.
  • Cut into bite size pieces and sprinkle with salt (no special amount).
  • Let drain for about an hour then rinse cucumbers well with cold water.
  • Cut onions into bite size pieces and add to cucumbers.
  • Mix sour cream, miracle whip, salt sugar, vinegar, and dill weed or chives together and pour over cucumbers & onions.
  • Stir thoroughly.

  • If preferred, to get rid of some of the juices of the cucumbers, place sliced cucumbers in a colander set in a bowl and sprinkle them with 1/2 teaspoon salt. Give them a toss and let them sit on the counter for 15-30 minutes.
  • When ready to assemble, remove the cucumbers (no need to rinse) from the colander and place in a salad bowl along with sliced radishes and chopped green onions. Drizzle it with the dressing and give it a toss.
