Creamy soups can be soul-warming and so very satisfying. I received this recipe from a friend, and over the years I have served it many times and for many occasions. - In a Dutch oven, combine the broth, celery, onion and carrot. Bring to a boil. Reduce heat; cover and simmer for 5 minutes. Add cauliflower; cover and simmer 15-20 minutes longer or until vegetables are tender. Cool slightly., Meanwhile, in a saucepan, melt butter. Stir in flour until smooth; gradually stir in milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. , In a blender or food processor, process vegetable mixture in batches until smooth; return to pan. Stir in the cream, parsley, salt, dill, pepper and white sauce; heat through.

ROASTED GARLIC AND BRIE SOUP
This French cheese soup comes from Leslie's Tavern in Rockingham, Vermont.

- Preheat oven to 325ºF. Place garlic in medium glass baking dish. Drizzle with 2 tablespoons oil. Cover dish with foil. Bake until garlic is golden and very tender, about 30 minutes. Transfer dish to rack and cool garlic.
- Heat remaining 4 tablespoons oil in heavy large saucepan over medium heat. Add onion and sauté until translucent, about 10 minutes. Add celery and carrot and sauté until vegetables are tender, about 10 minutes. Add flour and stir 3 minutes. Gradually stir in stock. Bring to boil, stirring frequently. Reduce heat to medium-low and simmer until soup is slightly thickened, stirring occasionally, about 15 minutes.
- Peel garlic and transfer to processor. Add 1 cup soup to garlic. Purée until smooth. Return mixture to saucepan. Stir in oregano and thyme. (Can be prepared 1 day ahead. Cover and refrigerate.)
- Bring soup to a simmer over medium-low heat. Gradually add Brie, stirring until melted after each addition. Season soup to taste with white pepper and salt. Ladle soup into bowls and serve.
CREAM OF BRIE SOUP
Very tasty soup. Great as a starter or light lunch. So good served in hollowed-out large Kaiser rolls!

- Melt the butter in a large saucepan over medium heat; cook the onions and celery until the onions are translucent, about 5 minutes. Stir in the flour, and cook for 3 minutes, stirring constantly. Gradually whisk in the chicken stock. Simmer until the celery is tender, about 20 minutes, stirring occasionally. Stir in the Brie cheese, and allow to melt for about 5 minutes.
- Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth, and pour into a clean pot. Heat the soup to almost simmering over medium-low heat. Pour in the cream. To serve, garnish with red and green pepper strips.

- In a large sauce pan, saute onion in olive oil until transparent.
- Add cauliflower and cook on medium for 5-7 minutes stirring often.
- Sprinkle flour over tender crisp cauliflower and then pour in chicken broth.
- Add milk and cook until mixture begins to thicken.
- Stir in thyme and brie and remove from heat. Stir until brie is melted and then add salt and pepper if desired.
- Use an emersion blender to blend soup or transfer to a blender or food processor instead.
- Garnish with green onions before serving.
- To freeze: Cool completely. Pour into freezer containers, label and freeze up to four months. To serve: defrost overnight in the fridge. Warm in microwave or on stove top without letting soup come to a full boil.
CAULIFLOWER, BRIE AND BACON SOUP
This is one of my favorite soups. I absolutely love Brie cheese because it's so creamy, and the flavor with cauliflower and bacon...WOW! This recipe came from LHJ or BH&G.

Steps:
- Fry bacon in a large pot until browned but not crisp.
- Drain on paper towels, then coarsely chop.
- Remove all but 2 tablespoons of drippings from the pot.
- Add onions and saute until translucent, about 7 minutes.
- Stir in cauliflower, broth, and celery soup.
- Bring to a boil, reduce heat, and cover and simmer for 45 minutes or until cauliflower is soft.
- Cool soup 10 minutes before adding bacon and cheese.
- When cool enough to handle, puree in batches in a blender until smooth, pouring pureed soup into another pot or storage container.
- Garnish with parsley and or red pepper.

- Preheat oven to 400° F. Line a rimmed baking sheet with foil and spray with cooking spray. Place cauliflower florets on the baking sheet, drizzle with olive oil, toss to coat, and season with salt and pepper to taste. Roast cauliflower for about 20-25 minutes, stirring halfway through, until tender and browned.
- Melt butter in a Dutch oven over medium heat. Add the onion, celery and carrots and cook, stirring occasionally, until softened (about 8-10 minutes). Add the garlic and cook, stirring constantly, for 1 more minute. Sprinkle in the flour and thyme; cook for 1 more minute, stirring constantly.
- Gradually add broth and bring to a boil, scraping the browned bits from the bottom of the pan as you stir. Cook until the broth thickens, about 5-7 minutes. Reduce the heat to low, stir in the milk and roasted cauliflower florets. Cook, stirring occasionally, for about 10-15 more minutes, or until the soup is warmed through. Do not let it boil. Remove from heat and stir in the grated cheese and fresh parsley or chives. Stir until the cheese melts. Taste and season with salt and pepper, if necessary. Ladle into bowls and garnish with crispy bacon, if desired.

- Take the brie out of the fridge and allow it to come to room temperature as you prepare the soup.
- Chop the shallots finely. Chop the cauliflower into small florets. You want them to be pretty small so that they are all submerged under the water once it's added.
- Melt the butter in a large Dutch oven with a lid over medium heat. Add the shallots and sauté until they are fragrant and translucent, about 5 minutes. Then add the Dijon mustard and stir to combine.
- Add the cauliflower, water, 1 teaspoon of salt, thyme sprigs and bay leaves to the pot. Don't submerge the thyme and bay leaves under the cauliflower because you'll need to remove them before blending. Be careful with the amount of water, you may not need quite as much as I call for in the recipe. You want the cauliflower to be just barely covered. It is going to release more water and shrink as it cooks.
