Steps:

  • Melt the butter or margarine in a large skillet over medium-high heat. Add the garlic and asparagus spears; cover and cook for 10 minutes, stirring occasionally, or until asparagus is tender. If you like your asparagus well done, reduce heat and cook an additional 10 minutes.

Roasted-Garlic Asparagus image

Steps:

  • Preheat oven to 400°F.
  • Line a large jelly-roll pan with parchment paper. Set aside.
  • In a small pot, heat the oil, garlic, onion powder, and parsley on medium-low heat. Cook for 3 minutes, until the garlic mixture is fragrant but not browned.
  • Spread the asparagus in a single layer on the prepared pan. Lightly sprinkle with coarse sea salt and freshly ground pepper. Drizzle on the garlic-oil mixture.
  • Roast for 8-10 minutes, until the asparagus are bright green; do not overcook.
  • Transfer to a platter and serve hot.

1/2 cup extra-virgin olive oil
8 cloves fresh garlic, minced
1 teaspoon onion powder
2 tablespoons fresh finely chopped parsley
2 pounds thin asparagus, ends trimmed

PAN-SEARED ASPARAGUS WITH CRISPY GARLIC

Before asparagus got moved to its own botanical family, Asparagaceae, in the early 2000s, it was part of the lily family along with onions, chives, shallots and garlic. It makes sense then, that asparagus and garlic make such a good duo. When cooked with care, both can be mild and sweet (or pungent and bitter when cooked carelessly). To highlight the best of both ingredients, gently fry garlic into chips for a crispy topping, then use the lightly infused oil to sauté the asparagus. Both thin and chubby spears work, as would nearly any other vegetable you like with garlic: broccoli, kale, snap peas, fennel and more.

Pan-Seared Asparagus With Crispy Garlic image

Steps:

  • Place a paper towel-lined plate next to the stove. In a medium or large skillet, combine the garlic and olive oil over medium-low heat. Cook, shaking the skillet often, until the garlic is very light golden, 3 to 5 minutes. Remove the skillet from the heat, tilt it, then use a slotted spoon to transfer the garlic to the towel-lined plate, leaving the remaining oil in the skillet. Season the crispy garlic with salt.
  • Return the skillet to medium-high heat. Add the asparagus, season with salt and pepper, and cook, shaking often, until bright green, crisp-tender and browned in spots, 4 to 5 minutes. Slide onto a platter, including any oil in the skillet. Top with the garlic chips and season again with salt and pepper.

I was looking for a fast way to prepare my asparagus, I was getting tired of steamed....So I put this together. Although this certainly is not as fat free as steamed, it is truly much more flavorful. It turned out so delicious that I was sad that I had not cooked larger portions, I loved the crispy, sweet garlic. NOTE: (The directions look really long but are only detailed not difficult.) Steps:

  • Fry bacon medium crisp in frying pan on med heat.
  • Remove bacon, chop coarsley and set aside - reserving bacon fat in pan.
  • Place 2 crushed cloves of garlic in pan and fry untill tender but not browned.
  • Meanwhile - To prepare asparagus for cooking:
  • Wash,.
  • Hold bottom end of asparagus in right finger tips, the other hand will hold asparagus in about the middle and bend to 'snap' off ends where they naturally break to get rid of the tough ends. Discard ends.
  • With a potatoe peeler and gently peel tough outer layer away from cleaned asparagus.
  • Place in frying pan with the partly cooked garlic and cook untill tender crisp - about 5 minutes. Watch that the garlic does not burn, what you are looking for is a gentle crispy golden color.
  • Sprinkle asparagus with chopped bacon and parmesan salt and pepper -topping with the crispy garlic from the pan. - serve immediately.

Crispy Garlic Parmesan Asparagus Pillows image

Steps:

  • 1. You want to work as quickly as possible to keep the dough from drying out so you don't need to do the whole moist towel cover up thing.
  • 2. Rinse asparagus and dry well.
  • 3. Cut the bottom ends off and discard. If you have thick asparagus you can use a potato peeler and peel about 1/2 way up the stalk so it's not fibrous when eating.
  • 4. Lay the phyllo dough flat on your workspace, spray completely with butter spray.
  • 5. Lay 3 or 4 pieces of asparagus (depending on their size) at the far right of the dough with 1/3 the stalk over the top edge.
  • 6. Sprinkle with Parmesan cheese.
  • 7. Then fold the bottom of the 2 or 3 pieces of dough (I like 2 and my husband likes 3 so it's more bready less vegetable flavor) up over the asparagus like tucking into bed.
  • 8. Then, from right to left, roll it all the way to make the bundle.
  • 9. Spray outside totally with butter spray and lay on parchment lined baking tray and repeat until you use all the dough and asparagus. It usually works out just about right but towards the middle, I decide if I need to increase the asparagus to dough ratios so I use the whole thing because they heat up nicely the next day too.
  • 10. Sprinkle all with garlic powder (not garlic salt cause the cheese and butter make it salty enough).
  • 11. Then sprinkle cheese on top of the pastries.
  • 12. Bake at 350 until golden brown about 15-20 minutes.

spray butter (you can melt butter and brush the dough but I found the spray butter was much easier and quicker)

Steps:

  • Prepare asparagus spears. First rinse thoroughly and cut off fibrous ends. To do this, pull one spear out of the bunch. Gently bend the spear until it snaps. Then cut the remaining spears at the same length as the first.

Steps:

  • Set the oven at 450°F.
  • With a vegetable peeler, peel tough ends of the asparagus.
  • In a shallow dish, combine the mayonnaise, mustard, and lemon juice.
  • Roll the asparagus spears in the mixture to coat them.
  • Spread the panko in a plate and roll the spears until they are well coated.
  • Transfer them to a cake rack and let them dry for 30 minutes.

  • In a large skillet over medium heat melt 2 Tablespoons butter. To make the chicken: Melt remaining 4 tablespoons of butter in a shallow dish. In another shallow dish combine bread crumbs, parmesan cheese, garlic powder, and flour. Dip the chicken in the butter and then coat in the bread crumb mixture and place in skillet.
  • Cook on each side for about 3-4 minutes until the outside is crispy and the chicken is cooked throughout. Set aside on plate.
