SKILLET CROOKNECK SQUASH AND ONIONS
We. Love. Squash. Simple, with only 3 other ingredients, besides salt and pepper, this recipe sets off the delicious, slightly sweet flavor of crookneck or summer squash. Mom used to stew squash, but this vegetable releases a lot of water when it cooks, so I don't add any water. The long, slow cooking helps to release the natural sugars in the onion and the squash. You can add additional herbs or seasonings, if you like, or cook it for less time to make it firmer, but this is how we do it. Just squash.

Steps:
- Melt ghee in a large nonstick skillet over medium heat. Add onion and cook, stirring occasionally, until onion is soft and fragrant, about 2 minutes. Add squash, season with salt and pepper, and cook, stirring frequently, for 5 more minutes.
- Adjust seasoning with salt and pepper and serve warm, garnished with fresh parsley.

SQUASH, YELLOW CROOKED NECK OLD SOUTHERN STYLE
WARNING! WARNING! This recipe is NOT fat or sugar free! Definitely NOT for diabetics, dieters, or the faint hearted! This is an old Southern style way of cooking squash. My family LOVES this. I only make it once or maybe twice a year when fresh yellow crook neck is available. So it is a real treat for them. I like to serve this...

Steps:
- 1. Wash and cut ends off of squash
- 2. Slice squash into slightly less than pencil width sized rounds
- 3. Add to boiling water and salt to taste Drain when fork tender (15-20 minutes)
- 4. While squash is cooking, slice/dice bacon. I usually stack about 4 of the slices of bacon and cut it down the center lengthwise, then slice the strips into pencil width pieces. (I use the best and leanest bacon I can find and I use 2 to 3 strips per pound of squash.)
- 5. Add cut bacon to large frying pan and cook until crispy on med-low heat turning frequently. Do NOT drain off fat.
- 6. When both bacon and squash are cooked, add drained squash to undrained bacon and stir to mix.
- 7. Add sugar and margarine and let cook down for another 15 to 20 minutes.
- 8. Serve hot.
- 9. NOTE: If making a smaller or larger amount of squash, just use about 1/4 cup of sugar and 1/4 stick of margarine and 2-3 slices of bacon per pound of squash.
CROOKNECK SQUASH CASSEROLE
This is the yummiest squash casserole I have ever run across. I don't only make it in the fall, I get a yearning for it all year long. It truly deserves the description "squash fantastic!"

- Preheat the oven to 350 degrees F (175 degrees C). Slice squash.
- Add 1 teaspoon salt to a pot of water and bring to a simmer. Add squash slices and simmer, uncovered, for 15 minutes. Drain.
- Put squash in a bowl and add 4 tablespoons butter. Gently blend in sour cream, Cheddar cheese, Parmesan cheese, green onions, sugar, and remaining 1 teaspoon salt. Transfer to a round casserole dish. Top with bread crumbs and dot with remaining 3 tablespoons butter.
- Cook in the preheated oven until hot and bubbly, about 30 minutes.

- Cut squash in half anf use a spoon to remove the seeds, but a few leftover seeds are ok if it happens! Do not remove the skin. Cut the squash in slices about 1/4 inch think. Heat the pan to medium, add butter, reduce to low. Add squash and garam masala, ginger, salt. Toss to coat, add walnuts. Cook 10 minutes and add sugar to taste. Add cider (alcoholic kind is advised but you can use regular cider. Pear cider alcohol works great as well.) Cook 5-10 more minutes or until tender.

CROOKNECK SQUASH FRITTATA

- Heat the oven to the high broil setting. Set a rack in the oven 3 to 4-inches from the broiler.
- In a medium bowl toss the sliced squash with the oil, rosemary, salt, nutmeg and pepper. Lay the squash in a single layer on a cooling rack set inside a foil lined half sheet pan. Broil until the squash is golden brown on 1 side, about 8 to 10 minutes.
- Whisk the eggs, ricotta, and Parmesan together in a medium mixing bowl. Put the squash in a 10-inch nonstick, oven-safe saute pan set over medium heat. Pour the egg mixture into the pan and stir with a silicone spatula to make sure egg gets under the squash. Cook without stirring until the egg mixture has set on the bottom and begins to set on top, about 4 to 5 minutes. Put the pan under the broiler until lightly browned and puffy, about 3 to 4 minutes. Loosen the frittata from the pan by moving a rubber spatula around the edges. Slide the frittata onto a plate or other serving dish, and cut into 6 servings. Serve warm or at room temperature.
CROOKNECK SQUASH MEDLEY
This was the only way we kids would eat squash when I was young. I tend to overcook it a little, cause I like it to start to caramelize. Unknown yield.

MY FIRST YELLOW CROOKNECK SQUASH FRIED
Well the name says it all. - chop onion scapes and basil together.
- crack egg into bowl add milk.
- add in onion, basil, squash and turn to cover.
- in the paper bag, add flour, corn meal, cheese, salt, and pepper (if you like spicey you can add in hot peppers, red peppers, ).
- shake, shake, shake.
- put into med hot skillet with butter and oil and fry up, turn when edges are turning brown.

- Add enough canola oil to cover the bottom of a large skillet. Heat over medium to medium-high heat.
- Slice squash. Sprinkle slices with salt, then roll in cornmeal to coat.
- Add all squash slices to the hot oil and allow to fry for 5 minutes without turning. Turn and continue to fry, flipping every so often, until crispy and golden brown on both sides, 10 to 15 more minutes. Serve immediately.

- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 1 quart casserole dish.
- Alternate slices of the squash and tomatoes in the prepared casserole dish, and sprinkle with green onions. Mix the vinegar, oil, mustard, salt, and pepper in a bowl, and drizzle over the vegetables.
