CUCUMBER AND UMEBOSHI SALAD

You can buy umeboshi paste on Amazon or at your local Asian market. This is so tasty. Quick and easy for a super light lunch

Cucumber and umeboshi Salad image

Steps:

  • 1. Mix together the umeboshi paste, mirin, scallions, and parsley, Add the cucumbers and mix well. Serve immediately.

1 Tbsp umeboshi paste
1 Tbsp mirin
1/4 c chopped scallions
2 Tbsp parsley chopped
2 large cucumbers peeled seeded and cut into half moons

This was my Dad's recipe and one of our family's all-time summer favorites.

Dad's Creamy Cucumber Salad image

Steps:

  • Mix cucumbers, sweet onion, and sea salt together in a bowl. Cover bowl with plastic wrap and let sit for 30 minutes.
  • Turn cucumber mixture into a colander set over a bowl or in a sink; let drain, stirring occasionally, until most of the liquid has drained, about 30 minutes more. Transfer drained cucumber mixture to a large bowl.
  • Stir mayonnaise, vinegar, sugar, dill, garlic powder, and black pepper together in a bowl with a whisk until smooth; pour over the cucumber mixture and stir to coat vegetables with the dressing.
  • Cover bowl with plastic wrap and refrigerate at least 2 hours.

1 tablespoon sea salt
1 ½ cups mayonnaise, or more to taste
2 tablespoons vinegar
1 tablespoon white sugar
1 teaspoon dried dill weed
1 teaspoon garlic powder
1 teaspoon ground black pepper

UMEBOSHI VINAIGRETTE

A vinaigrette dressing made using Umeboshi (Japanese Pickled Plums). Very nice on blanched bean sprouts.

Steps:

  • Place all ingredients in blender and puree.

1/4 cup rice vinegar or 1/4 cup white vinegar
1/2 cup vegetable oil
1 tablespoon sugar, to taste
1 teaspoon sesame oil
1 -2 tablespoon umeboshi plum paste or 2 large umeboshi, seeded
salt and pepper
