DATE RICE KRISPIES BARS
DELICIOUS!! I have made this recipe for 30 years and it is my DH's favorite of all my dozens of goodies! They can be sprinkled with powdered sugar or coconut on top. I use Splenda in the recipe to cut down on sugar calories. An easy and quick preparation.

Steps:
- Combine butter, dates and brown sugar (or Splenda) in saucepan. Cook over LOW heat for 5 minutes, stirring constantly.
- Remove and add vanilla, nuts, coconut and rice cereal. Stir until well blended.
- Press down hard into a buttered 9 x 9 inch pan. Sprinkle top with additional coconut and lightly press inches (or use optional method of cutting and roll into logs and roll in powdered sugar without coconut).
- When cool cut in strips or squares.
- Enjoy!

A friend gave me this recipe more than 30 years ago. It is my husband's favorite treat. I like these with pecans or walnuts. If you do not like nuts, omit the nuts and use 3 cups Rice Krispies. -Melinda Lord, Washington, Iowa

- In a large bowl, combine Rice Krispies and pistachios. In a large saucepan, combine butter, dates and sugar. Cook and stir over medium heat until mixture is combined., Remove from heat. Stir in vanilla. Pour over Rice Krispies mixture; stir to coat. When cool enough to handle, press into 1-1/4-in. balls. Cool. If desired, roll in confectioner's sugar. Store in an airtight container at room temperature.

- Combine the sesame seeds and sunflower seeds in a dry skillet over medium heat. Cook, stirring until fragrant and toasted. Salt lightly, and set aside to cool.
- Combine the dates, raisins, apricots, cherries, chocolate chips and the toasted seeds in the container of a food processor. Pulse to chop until small but not pasty. Transfer to a large bowl, and mix with oats and crisp rice cereal.
- In a small glass bowl, mix together the corn syrup, sugar and peanut butter. Heat in the microwave until bubbly. Stir in the powdered milk, vanilla, and almond extract. Pour the peanut butter mixture over the bowl of cereal and goodies, and mix with a wooden spoon until everything is evenly coated.
- Press the mixture into a greased 10x15 inch jellyroll pan using wet hands. Cut into squares, and allow to cool completely before removing from the pan.

- In a high speed blender or food processor combine the Medjool dates, nut/seed butter, and vanilla extract.
- Blend to form a thick sticky paste, you will likely need to use the tamper or stop and stir frequently. If absolutely necessary you can add 1-2 tablespoons of either maple syrup or coconut oil to get it to blend. Do not add water or the bars will turn out soggy.
- Transfer the date paste to a bowl and microwave for 30-60 seconds to soften. Or heat on the stovetop until soft. It will not change in appearance, but makes it much easier to mix into the cereal so don't skip this!
