ONION FLATBREAD
This impressive flatbread couldn't come together more simply. Prepared pizza dough is stretched and topped with thinly sliced onions and shredded cheese. Bake until browned in a hot oven and that's it! Top with herbs and flaky salt and you have a delicious side dish perfect with any meal or on its own.

- Press 12 ounces pizza dough into an 8-by-12-inch rectangle on a floured parchment-lined inverted baking sheet. Rub with 2 tablespoons olive oil, then top with 1/2 cup shredded cheddar and 1/2 thinly sliced red onion. Slide the parchment onto a preheated pizza stone or baking sheet in a 475˚ F oven; bake until browned, 9 to 11 minutes. Top with sea salt and chopped parsley.
GREEN ONION-SESAME FLATBREADS

- In medium bowl, mix flour, sesame seed, baking powder and salt. Stir in sesame oil and enough cold water to make a smooth, soft dough. On floured surface, knead dough 3 minutes. Divide dough into 6 equal portions; keep covered. Roll 1 portion at a time into 7-inch round.
- Sprinkle each round with about 1 tablespoon onions. Roll up tightly, pinching side and ends to seal. Roll into 12-inch rope. Shape each rope to form a coil, tucking end under coil; roll into 7-inch round.
- In 8-inch skillet, heat vegetable oil over medium heat to 375°F. Cook 1 flatbread in oil 1 to 3 minutes, turning once, until golden brown. Drain on paper towels. Repeat with remaining flatbreads. Cut each into 4 wedges. Serve warm.

- Puree olive oil, chopped green onions, soy sauce, and sesame oil in blender. Transfer mixture to small bowl. Stir in sesame seeds; season mixture with pepper. DO AHEAD Can be made 1 day ahead. Cover; chill.
- Prepare barbecue (medium-high heat). Generously brush 1 side of each eggplant slice with green onion mixture. Place eggplant slices, seasoned side down, on grill. Brush tops of eggplant slices with green onion mixture. Cook until tender and charred in spots, about 4 minutes per side. Transfer to platter. Garnish with thinly sliced green onions; serve warm or at room temperature. DO AHEAD Can be made 4 hours ahead. Let stand at room temperature.

- On microwavable plate, place frozen rolls. Cover with microwavable plastic wrap; microwave on High 25 seconds. Turn rolls over; rotate plate 1/2 turn. Microwave on High 25 seconds longer to thaw.
- Spray 13x9-inch pan with cooking spray. On lightly floured surface, knead roll dough together. Pat dough in bottom of pan; brush with oil. Sprinkle with remaining ingredients.
- Cover; let rise in warm place about 40 minutes or until slightly puffy.

- Heat grill to high and dust a non-stick baking sheet with a little flour. Mix the self-raising flour, sesame seeds, a pinch of salt and a grind of black pepper in a large bowl. Stir in the natural yogurt and milk or water, then mix well to form a soft dough.
- Divide the dough into 4 and press each piece into an oval approx 5mm thick. Place on the sheet and grill for 3 mins on each side until puffed and golden. Brush with a little olive oil before serving, if you like.

- In a large mixing bowl, combine the flour, yeast, sugar, and tepid water with a rubber spatula. The dough will be sticky and slightly wet, but still workable. Do your best not to add more flour to the dough from this point on!
- Knead the dough until it forms a soft, smooth ball. Cover the mixing bowl with a damp kitchen towel and proof in a warm spot until the dough triples in size, 60-90 minutes. I proof my dough inside my microwave, with a large mug of just-boiled water next to it and the microwave door closed.
- Once the dough is done proofing, add the sea salt, white pepper, and Sichuan peppercorns (or five spice powder). Knead for another 5 minutes, until everything is well-combined. If the stickiness of the dough makes it difficult to work with, oil your hands rather than using additional flour.
- Cover the dough with the towel again, and let it rest on the counter for another 15 minutes. At this point, you can very finely chop the scallions (they must be small to distribute evenly throughout the pancake and release more flavor).
