DEBBIE'S POTATO CASSEROLE
One of my dance club friends who is a very good cook, gave this recipe to me. Everytime I prepare this dish, I think of her and how beautifully she and her husband dance our favorite specialty dance called the 'Night Club Two Step'.

Steps:
- 1. Saute onions in butter. Mix the soup with 1/2 can water & whisk together with the cream cheese. Add to the onions in skillet, stir until melted and smooth. Add the potatoes and chicken.
- 2. Pour into a buttered 8 X 11 baking dish and bake at 350 degrees for 45 - 50 minutes. The top should be nicely browned. Top with cheddar cheese, return to the oven until cheese is melted, about 5 minutes.

- In a small skillet, saute potatoes in oil until lightly browned. Remove from the heat; stir in 1/3 cup cheese, bacon, mayonnaise and mustard., Transfer to an ungreased 3-cup baking dish. Bake, uncovered, at 375° for 15-20 minutes or until cheese is melted. Sprinkle with remaining cheese.

Another Sweet Potato Casserole. This is my version. I have been making this for 30 years and it is a family favorite. Mine is made with baked sweet potatoes. I think it makes a big difference.

Steps:
- Combine all the filling ingredients in large bowl and mix well. (I use my hand mixer for this)
- Pour into a greased 3 quart baking dish.
- Mix all topping ingredients. Spoon onto filling mixture.
- Bake 350 degrees for 30-40 minutes. (depending on the depth of your baking dish).
