OVEN-DRIED STRAWBERRIES

Here's your opportunity to use up berries that are slightly past their prime. This recipe method concentrates the berries' flavors, so the more delicious they are to begin with, the better they will be dried.

Oven-Dried Strawberries image

Steps:

  • Toss strawberries and sugar in a large bowl and let sit until berries start to release their juices, 25-30 minutes.
  • Preheat oven to 185°F (or the lowest possible setting, which may be 200°F). Spread out berries on a rimmed baking sheet lined with a nonstick baking mat and bake, rotating baking sheet about every 30 minutes, until berries are darkened in color and dried out around the edges but still slightly juicy in the center, 3-3 1/2 hours. Let cool on baking sheet.
  • Do Ahead
  • Berries can be dried 1 week ahead. Cover and chill.

Steps:

  • For those not aware of the jello method you simply slice the strawberries and roll them in dry jello. then dehydrate as usual. Time depends on thickness, ripeness, and things like the weather outside. usually 6-8 hours but keep checking and turn over after 3 hours and switch trays. This made 2 trays.
  • Simply slice as evenly as you can about 1/4 inch thick and coat both sides and start the dehydrator. Mine simply is on or off but if you have temps or are using your oven put it on 135 degrees.
  • *NOTE: pick ripe but not over ripe berries and as you cut them put them on a paper towel to start the drying process.
  • Use strawberry jello for anything you are adding to cereals in the morning Use lemon or lime jello for that sweet tart taste for snacking Use bluesberry jello for a great addition to applesauce
  • use a cookie sheet if using a oven and a fruit leather catch if using a dehydrator. Put it on the first row then on the second row start your strawberries. They drip a lot of gooey sap like ooze that will drip through to the motor if you do not

Steps:

  • In a large mixing bowl, combine the lemon juice and water. Set aside until ready to use.
  • Peel, core and dice the fruit into 1/2-inch cubes, with the exception of the strawberries. Slice the strawberries 1/8 of an inch thick. Place the fruit into the lemon water and allow to soak for up to 2 minutes. Remove and drain thoroughly.
  • Lay 1 (14 by 14-inch) plastic dehydrator sheet on 1 of the air-conditioning filters. Place the fruit on the plastic dehydrator sheet and cover with another plastic sheet. Repeat this process with remaining plastic sheets and two more filters, stacking on top of the first one. Top these with the remaining empty filter. Next, lay the box fan on its side and lay the filters on top of it. Strap the filters to the fan with two bungee cords. Stand the fan upright, plug in and set to high. Dry for 42 to 48 hours. When dry, the fruit should be pliable but not sticky. You should not be able to squeeze moisture from the fruit. If using a commercial dehydrator, follow the manufacturer's directions.
  • Remove the fruit from filters and store in an airtight container in a cool dry place.

  • Wash, dry, and hull (remove the stems) the strawberries. Slice each strawberry into thin slices using a sharp knife, about ⅛" thick. You want the slices to be as similar in size and thickness as possible so that they all dry at the same rate. Once you have all of your strawberries sliced, place each piece on the dehydrator rack until the entire level is full. Fill all of the levels with your strawberry slices, making sure to leave room around each one so that the air can circulate them. You can sprinkle with sugar or lemon juice if desired, but it's not necessary.
  • Place the lid on the dehydrator and set it to 135º. It will take anywhere from 6-10 hours for the strawberries to fully dehydrate. Start checking them around 6 hours. You want them to be just a little rubbery but not wet. They will become crispy once they cool. You may need to remove some smaller pieces first and keep dehydrating any larger pieces a little longer.
