EASY QUICHE
This is an easy mix-it-up-in-one-bowl-and-cook recipe. I make it for every brunch I attend. You may substitute chopped spinach for the broccoli if you wish.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 10 inch quiche dish.
- In a large bowl, beat together milk, eggs, baking mix, butter and parmesan cheese. Batter will be lumpy. Stir in broccoli, ham and Cheddar cheese. Pour into prepared quiche dish.
- Bake in preheated oven for 50 minutes, until eggs are set and top is golden brown.

MEAT LOVERS' QUICHE
Chock full of a trifecta of bacon, sausage and ham, you better believe no one will go hungry after a slice of this quiche. Store-bought pie dough means this dish comes together quickly, and it's the perfect way to use up breakfast meat in your fridge.

- Preheat the oven to 375 degrees F. Unroll the pie crust and fit into a 9-inch quiche pan or pie plate. Place a piece of parchment paper over the dough and fill with pie weights or dried beans. Bake until the crust is lightly browned, about 10 minutes. Remove the crust from the oven. Remove the parchment and pie weights and return the crust to the oven. Bake until the crust is baked through, about 5 to 7 minutes longer. Set aside to cool.
- Meanwhile, cook the bacon in a large skillet over medium-high heat until crisp. Remove to paper towels to drain. Chop the bacon. Cook the sausage in the same skillet until browned and crumbly, about 7 minutes. Remove the sausage with a slotted spoon, and set aside with the bacon.
- Whisk together the half-and-half, Miss Brown's House Seasoning (recipe follows) and the eggs. Sprinkle the bacon, sausage, ham, green onions and Cheddar evenly on top of precooked crust. Pour the egg mixture on top. Bake until the center is set, 25 to 30 minutes. (Cover the edges with a pie shield or aluminum foil if getting too brown.) Allow to cool slightly before serving.
- Stir together all ingredients in a small bowl. Store in an airtight container.
YUMMY QUICHE
This quiche is easy and delicious as a main dish or brunch!

- Preheat oven to 350 degrees F (175 degrees C). Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- Place crust in a 9 inch glass pie plate. Sprinkle bacon inside of crust. In a small bowl, combine Cheddar cheese, Monterey jack cheese and flour. In a separate bowl, beat together eggs, cream, onion and green chiles. Add cheese mixture; stir well. Pour mixture into pie crust.
- Bake in preheated oven for 60 to 70 minutes, until set. Let stand 10 minutes before serving.

DELICIOUS QUICHE

- crust 1. Mix flour, cheese, oil and milk and place in the freezer for 10 minutes 2.Combine flour mixture with water, salt, and butter by hand. 3. Divide dough into 4 4. Roll out between pieces of wax paper 5. Refrigerate 30 minutes while preparing the filling filling 1. Mix the flour with the chopped vegetables 2. On low heat while stirring continuously, fry the vegetables in the olive oil until soft 3. Mix bacon and/or ham to the vegetable mixture, set aside 4. In another bowl mix liquids 1. Place rolled out crusts over pie dishes, carefully push the dough into the shape of the dish and roll up the edges. 2. Fill half of the depth of the pie dishes with vegetable mixture, press down 3. Pour egg/dairy mixture over the vegetables, filling the pie dishes to the rim 4. Paint visible crusts with egg white and water 5. Carefully place pie dishes in a pre-heated 350 degree oven 6. Bake 40 minutes until pie crusts are golden and the egg/dairy mixture is firm 7. Cool on stovetop for 10 minutes 8. Serve Serving suggestions This quiche works well either as an appetizer or as a main course with a simple salad, makes a great comforting light dinner
