THUMBPRINT COOKIES I
I usually make these around Christmas.

Steps:
- Preheat oven to 300 degrees F. Grease cookie sheets.
- Separate egg, reserving egg white. Cream butter or margarine, sugar, and egg yolk.
- Add vanilla, flour and salt, mixing well.
- Shape dough into balls. Roll in egg white, then walnuts. Place on cookie sheets about 2 inches apart. Bake for 5 minutes.
- Remove cookies from oven. With thumb, dent each cookie. Put jelly or preserves in each thumbprint. Bake for another 8 minutes.

Make sure to make a deep impression in the dough with your thumb or a small pestle, and don't overfill the hole with jam, as these cookies will flatten and spread in the oven. Also, be sure to leave plenty of room in between the dough on the cookie sheet. Use a doily as a stencil to dust the confectioners' sugar in a festive pattern.

- Position a rack in the upper third of the oven and a second rack in the lower third then preheat to 350°F. Line 2 baking sheets with parchment paper.
- In a large bowl, sift together the flour, baking soda, and salt.
- In the bowl of a stand mixer fitted with the paddle attachment, combine the butter and sugar and beat on medium speed, scraping the bowl occasionally, until light and fluffy, about 2 minutes. Add the egg and vanilla and beat until fully incorporated, about 1 minute. With the mixer on low, add the flour mixture, and stir until just combined. Shape the dough into a disc, wrap it in plastic, and chill at least 1 hour and up to 24 hours.
- Roll the dough into 1-inch balls and arrange on baking sheets, leaving about 3 inches between cookies. Using your thumb or the round end of a small pestle, make a well in the center of each cookie. Using a teaspoon, fill each well with jam, being careful not to overfill the wells. Bake, switching the cookies between the upper and lower racks about halfway through baking, until golden, about 15 minutes. Cool the cookies on baking sheets for 10 minutes before transferring to a wire rack to cool completely. Dust with confectioners' sugar. Continue baking cookies on cooled baking sheets. DO AHEAD: The cookies can be baked ahead and stored, in an airtight container at room temperature, up to 3 days.
DELICIOUS THUMBPRINT COOKIES
Granny made these delights at the holidays, but honestly, they're good for any time at all! Fun to get the kids involved in because they love leaving their imprint in the cookie dough. Soft, sandy, light texture makes it hard not to eat just one.

Steps:
- Cream softened butter with sugar until fluffy and light; add vanilla.
- Separate eggs (reserving whites) and add yolks one at a time to butter mixture combining thoroughly.
- Gradually add dry ingredients to wet mixture and knead together.
- Roll a teaspoon of dough into a ball and place on a greased cookie sheet.
- Gently press your thumb into the center of the ball and flatten, leaving a small well in which to put your favorite jam or fondant icing.
- Preheat oven to 375 degrees and Bake for 12 minutes.
- While still warm, fill each thumbprint and dust the cookies with confectionery sugar before serving.

- Using a handheld or stand mixer with a paddle attachment, beat butter and sugar on medium speed for 3-4 minutes until fluffy. Add egg yolks and vanilla extract and beat until combined. Reduce speed to low. Add flour and beat just until combined. Do not overmix. The dough will be soft at this point so cover the bowl with plastic wrap and place in the fridge for about 1 hour or until firm enough to easily roll into balls.
- Take dough out of the fridge. Roll dough into 3cm balls, the size of 1 tablespoon. Place onto prepared baking sheet, spacing them about 5cm apart. Use your thumb or the back of a wooden spoon to make an indentation into the center of each cookie, and fill with about 1/2 teaspoon jam.
- Bake cookies for 13-15 minutes, or until cookies appear golden brown at the edges. Transfer to a wire rack and allow to cool completely.

- In a stand mixer with the paddle attachment cream butter and sugar until light and fluffy, 1-2 minutes.
- Add in egg yolk and vanilla and mix until combined. Make sure to scrape down the sides of the bowl.
- Next add in the salt and flour and mix until the dough is completely combined. You don't have to worry about over mixing this dough. It is important that all of the flour and butter is completely mixed before rolling the cookies. (It will look dry and crumbly that is ok!)
