HERBED BROCCOLI MASHED POTATOES
Broccoli and fresh herbs feel right at home when mashed with creamy potatoes.

Steps:
- Bring a medium pot of salted water to a boil. Add the broccoli and cook until tender, about 10 minutes. Drain thoroughly.
- Put the potatoes in a medium pot, cover with cold water and add 2 tablespoons salt. Bring just to a simmer and simmer the potatoes, uncovered, until tender, about 45 minutes. Drain.
- Peel the potatoes and return them to the pot (if desired, pass them through a ricer or food mill after peeling). Add the broccoli. Mash the potatoes and broccoli with the milk and butter using a fork or potato masher. Stir in the chives, dill, parsley and 2 teaspoons salt; season with pepper.

- Preheat oven to 350°. In a Dutch oven, heat butter over medium-high heat. Add onion and garlic; cook and stir until tender, 2-3 minutes. Stir in flour, white pepper and salt until blended; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2 minutes., Stir in 1 cup cheese. Reduce heat; cook until cheese is melted (sauce will be thick), 1-2 minutes. Remove from heat., Add potatoes, ham and broccoli to sauce; stir gently to coat. Transfer to 8 greased 8-oz. ramekins., Bake, covered, 40 minutes. Sprinkle with remaining cheese. Bake, uncovered, until potatoes are tender and cheese is melted, 20-25 minutes longer.

BROCCOLI-CHEDDAR POTATOES

- Preheat the broiler. Bring a pot of salted water to a boil. Pierce each potato several times with a fork; put on a plate and microwave until tender, 10 to 20 minutes.
- Cook the bacon in a large ovenproof skillet until crisp. Drain on paper towels. Pour the fat into a bowl; wipe out and reserve the skillet.
- Add the broccoli to the boiling water and cook 3 minutes, then drain.
- Halve the potatoes lengthwise, then scoop the flesh into a bowl, leaving a 1/2-inch-thick shell. Place the shells cut-side down in the skillet and brush with the reserved bacon fat. Transfer the skillet to the broiler; broil until golden, about 3 minutes.
- Mash the potato flesh with the butter and sour cream; season with 1 1/4 teaspoons salt, and pepper to taste. Toss in the broccoli, scallions, bacon and half of the cheddar. Turn the potato shells cut-side up in the skillet. Stuff with the broccoli mixture and sprinkle with the remaining 3/4 cup cheese. Broil until the cheese melts, 3 to 4 minutes. Toss the spinach with the dressing; serve with the potatoes.
BOILED POTATOES WITH DILL

- Steam the potatoes over boiling water while covered with a handful of dill leaves for 5 minutes. Add the broccoli to this and steam 5-10 minutes longer till the vegetables are tender. Add the potatoes and broccoli to a serving bowl. Add the green onions, lemon, minced dill, oil and salt and pepper to taste. Toss. Serve warm.

BROCCOLI, BUTTERMILK AND DILL POTATOES
This recipe came from Cooking Light magazine and it's really tasty. It can all be done ahead of time and then baked in the oven whenever you're ready to serve them. The recipe calls for cheddar cheese on top, but I don't really think it's necessary. It makes 4 side dish servings, or 2 entrée servings.

- Preheat oven to 375°.
- Bake potatoes at 375° for 1 hour, or until tender.
- Heat oil in skillet over medium heat.
- Add broccoli and onion; sauté 4 minutes or until tender.
- Set aside.
- Split open each potato, scoop out pulp, leaving a 1/4" thick shell.
- Combine potato pulp, broccoli mixture, sour cream, buttermilk, dill, Parmesan, salt and pepper; mash.
- Stuff potato shells with potato mixture and sprinkle with cheddar cheese (if desired).
- Place on baking sheet and bake at 375° for 10 minutes, or until heated through.

- Preheat broiler to high with rack 8 inches from heat. Place potatoes and 2 tablespoons water in a microwavable bowl; cover with plastic wrap. Microwave on high until tender, 7 to 8 minutes.
