GRANDMA'S CARROT CAKE
My grandma was very special to me. She had a big country kitchen that was full of wonderful aromas any time we visited. This was one of her prized cake recipes, and it continues to be a favorite from generation to generation. -Denise Strasz, Detroit, Michigan

- Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan., Beat first 4 ingredients until well blended. Whisk together flour, baking soda, salt and cinnamon; gradually beat into sugar mixture. Stir in carrots and walnuts., Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 50-60 minutes. Cool in pan 10 minutes before removing to a wire rack; cool completely., For frosting, beat cream cheese and butter until smooth. Gradually beat in confectioners' sugar. Spread over cake.

GRANDMA'S CARROT CAKE
This recipe has been a favorite in our family for three generations. Different from traditional carrot cakes, this cake is extremely moist and flavorful and is topped with a buttermilk glaze while still warm. Try it and I think you will agree that it is the best!! Be certain to reduce the baking temperature to 325 degrees F(165 degrees C) if using a glass baking pan.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan. Sift together the flour, baking soda and cinnamon. Set aside.
- In a large bowl, combine the sugar and oil until blended. Beat in the eggs one at a time, then stir in the vanilla. Stir in the flour mixture just until incorporated. Fold in the pineapple, carrots, coconut and walnuts. Pour batter into prepared pan.
- Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. While still warm, poke holes in the cake with a fork.
- For the glaze: In a saucepan, combine butter, sugar, buttermilk and vanilla. Bring mixture to a boil over medium heat, then reduce heat and cook for 5 minutes. Pour glaze over warm cake, then allow to cool completely.

EASY CARROT CAKE
This recipe makes a fabulous and moist carrot cake. Try it for Thanksgiving instead of or in addition to pumpkin pie.

- Preheat oven to 350 degrees F (175 degrees C). Grease one 9 or 10 inch tube pan.
- Combine the sugar, flour, salt, cinnamon, soda, oil. With an electric mixer beat in the eggs one at a time. Stir in the carrots and the walnuts. Pour the batter into the prepared baking pan.
- Bake at 350 degrees F (175 degrees C) for 1 hour 20 minutes. Note: this cake can be made in two 9 inch layer cake pans just change the baking time to 40 minutes.
- To Make Frosting: With an electric mixer blend the cream cheese and cream. Add the vanilla and confectioners' sugar. Frosting can be spread and a still warm cake.

GRANDMA'S APPLE CARROT CAKE
Rich, moist and cinnamony, this old-fashioned cake recipe was handed down from our beloved Grandma Kelly. It's a perfect way to use up a few carrots and an apple...and it's ideal for smaller families, since it yields fewer servings.

- In a large bowl, beat the eggs, oil and sugars until smooth. Combine the flour, cinnamon, baking powder, baking soda and salt; gradually add to egg mixture just until combined. EASY CARROT CAKE, GRANDMA W
This was another recipe of Grandma W's, with pineapple optional, and no raisins in the mix. However adding pecans makes this just amazing! Try this one, it is so darn good! With or without pineapple, this is amazing, and super easy. I wanted a carrot cake recipe for years, and it took me getting Grandma's recipe box for me to get one! (and actually she had multiple recipes)

- Stir flour, soda, powder and cinnamon. In a separate bowl combine oil, sugar and eggs, then combine. When well blended add remaining. Pour into lightly greased 9x13. Bake at 350 degrees 35-40 min or until toothpick is clean. Cool, frost, and refrigerate.
EASY BAKING CARROT CAKE, GRANDMA W'S
Another carrot cake, this one a triple layer cake, and with applesauce! Pineapple preserves between the cake layers make this a pretty cake too! Super easy...and wanting carrot cake recipes for years, Grandma W's recipe box came through for me!

- Grease and flour three 8" round pans. Mix flour, sugar, cinnamon, soda and allspice with salt. Beat eggs until light and continue beating while adding applesauce. Beat in dry ingredients until smooth. Put in carrots and pour into pans. Beat at 350 degrees 25-30 min or until toothpick comes out clean. Cool 10 min, then remove to racks. Spread top of first layer with preserves, put 2nd layer on top and top it with preserves also. Add third layer and top entire cake and sides with cream cheese frosting.
- NOTE: Grandma always made her own cream cheese frosting, as did mom. However, if you want to use a store bought one, feel free.
