EASY MEATBALLS

My husband makes these easy meatballs with simple ingredients like eggs, panko bread crumbs, garlic powder, and fresh basil, and they come out flavorful and delicious every time! Kids love them too! If desired, add the cooked meatballs to your favorite sauce until submerged (this brings out the moistness).

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Mix eggs, Italian seasoning, basil, salt, pepper, and garlic powder together in a large bowl. Add beef and panko bread crumbs and mix thoroughly.
  • Shape mixture into about forty 1 1/2-inch balls, a little smaller than golf balls, using a teaspoon. Place on ungreased, rimmed baking sheets.
  • Bake in the preheated oven until no longer pink in the centers, turning halfway through cooking time, 10 to 15 minutes total.

Steps:

  • 1. *Note: If using Bamboo skewers soak for 45 minutes in water to prevent scorching. With skewer, Peirce a piece of onion then a meatball, then a piece of green papper, then another meatball, add a red pepper and alternate using different veggies and continue until you have 4-6 meatballs on the skewer ending with a piece of onion. How many you get on depends on the size of your meatballs.
  • 2. Repeat for your all the skewers you are using. Again depending on how big your meatballs are. Line a cookie sheet pan with foil if baking them and place them on the foil.
  • 3. Brush both sides of the skewered balls and veggies with BBQ sauce. Use as much as you like. I don't like a whole lot.
  • 4. Grill them over medium heat, or Broil 6" from broiler, or bake 375 degrees until the balls are golden and heated through about 15-20 minutes. I baked them. The meatballs are already cooked so you just want the veggies crisp tender and meatballs hot.

24 cooked meatballs, thawed if frozen
1 green or yellow pepper or both or squash, cut into chunks
1 red pepper, cut into chunks
1 medium onion, cut into chunks
1 c barbecue sauce, your favorite kind and as much as you like

I always have some cooked meatballs in my freezer so this is an easy recipe for me to make!. They look quite elegant and could be served to company any time. You will neeed 8 1" pieces of green pepper and 8 1" pieces of red pepper and 8 pieces on onion. I have simple said !/2 pepper and 1 onion to keep the ingredient list simple. If using Bamboo skewers soak for 45 minutes in water to prevent scorching. The cook time is apprx depending on your method of cooking and the size of your meatball. I used a griddler and it took 7 minutes, BBQ perhaps 15 minutes and broiling about 15 minutes 6" from the broiler.
