CHILE-GARLIC EDAMAME
Frozen edamame are a delicious and convenient way to get more protein into your diet. For this recipe, garlic and red pepper flakes are quickly toasted in olive oil then tossed with the cooked edamame for a spicy, healthful kick.

- Cook 1 pound frozen edamame in the pods in salted boiling water until tender, 5 minutes; drain. Heat 1 tablespoon olive oil, 1/4 teaspoon red pepper flakes and 2 sliced garlic cloves in a skillet over medium heat, 1 to 2 minutes. Stir in the edamame, some lime juice and salt.

EDAMAME WITH CHILE SALT
Edamame disappear quickly when simply salted, but they take on added appeal when tossed with chile flakes. Boil them and set them out while you put the finishing touches on the meal.

Steps:
- Pulse red-pepper flakes in a spice grinder until finely ground. Mix with salt and sugar in a small bowl.
- Bring a large pot of water to a boil. Add frozen edamame, and cook until bright green and heated through, about 4 minutes. Strain, and transfer to a large bowl. Toss with chile-salt mixture, and serve.
CHILE-ROASTED EDAMAME

- Split the edamame pods and release the beans into a bowl. Discard the pods. Stir together the oil, basil, chile powder, onion salt, cumin, paprika and black pepper in a small bowl. Drizzle the mixture over the beans and toss to coat. Arrange the beans in a single layer in a shall baking dish. Roast, uncovered, at 375 degrees for 12 to 15 minutes, stirring once, until the beans begin to brown. Serve hot as a vegetable side dish or cooled as a snack. Refrigerate any leftovers.
SPICED EDAMAME

- Heat the salt, chili powder, and pepper flakes in a small dry skillet over medium heat, stirring until hot and aromatic, about 3 minutes. Remove from the heat and crumble in the oregano.
- Boil the edamame pods in salted water until tender, about 8 minutes. Drain in a colander and pat dry. Toss the edamame pods with the chili-salt and serve warm.

- Bring the water to a slow boil over medium heat. Add the salt. Add the edamame and cook for 5 minutes. Drain. Never wash after cooking. Place on sheet pan to cool. Heat a saute pan with the olive oil. Add the edamame and season with salt, pepper and herb mix. Toss and serve.
- Place everything in a mill or coffee grinder and blend 15 to 20 seconds. Remove to a sealable container.

Good for snacking or for a crunchy addition to your salad. You can play around with the seasonings you mix in (some ideas are: paprika, black pepper, chili powder, wasabi powder).

- Coarsely grind sesame seeds and salt in a spice grinder, then place in a small bowl. (Alternatively, chop sesame seeds and salt together finely.)
- Fill a large pot fitted with a steamer insert or basket with 2 to 3 inches water. Bring water to a simmer over medium-high heat. Steam edamame, covered, until hot, 3 to 4 minutes. Transfer to a bowl, and sprinkle with sesame-salt mixture. Serve immediately.
