FOUR-BEAN MEDLEY
This side dish always gets compliments. It's easy to make ahead and simmer in the slow cooker, so it's super convenient to take to potlucks and church get-togethers. -Susanne Wasson, Montgomery, New York

Steps:
- Simmer sausages in shallow boiling water to heat through, drain and wipe out, return to stove.
- While the sausages simmer, slice the bacon into 1/2-inch wide batons. Add a drizzle of olive oil to the pan and heat over medium-high heat. Thick cut the knocks on an angle and add them to the skillet and sear at the edges, remove the sausages and add the bacon and render until almost crisp but not-quite. Remove the bacon from the skillet to paper towel to cool but reserve the drippings.
- In a casserole dish, stir together the beans, garlic, and shallots and season with lots of coarse black pepper. Smooth out in the dish and wipe down the sides of the dish. Nestle the chunks of knocks into the beans, arranging them all around the casserole and allowing them to peek up and out a bit. Dot the beans with thick Worcestershire sauce. Scatter the chiles and scallions and herbs over top of the casserole. Scatter the bacon over top and using a pastry brush, dot with some of the drippings. Cover and store for a make-ahead meal.
- Preheat the oven to 375 degrees F.
- Bake the casserole in a hot oven on a baking sheet liner until the top surface is crispy in spots and bubbly all over.
- Slice the brown bread into 1-inch thick slices. On a heated griddle, melt 2 tablespoons butter and toast brown bread until slightly browned and crispy, flip the bread , and repeat.
SOUTHWEST FOUR BEAN SALAD SUPREME
Tim and I came up with this recipe after having a deli salad that we thought we could make on our own...and better. This is a very versatile recipe. I have served it on a bed of greens and have added chopped grilled chicken on occasion. You can also add a can of quartered artichoke hearts and a jar of chopped roasted red bell peppers. ( Be sure to drain both.) It's a great day before shopping recipe as most ingredients are canned, bottled or frozen. Be prepared...this makes enough to take to a potluck. It makes approx. 18 cups.

Steps:
- Open all the cans of beans and the olives and pour into a colander in the sink. Rinse well with cold water and let it drain well. Place into a large mixing bowl. Rinse the soybeans in the strainer, drain and add to the bowl. Add the frozen southwest vegetables and corn to the bowl. Add the green chilies, onion, cilantro and basil and stir. At this point, I just add the dressing ingredients and stir well. Add the crumbled feta cheese and stir again. Serve. Note: when making to take to a potluck don't stir in the feta cheese until just before serving.

GREEN BEAN SUPREME
I have been using this recipe for ages. I found it in the newspaper years ago and I like to make it when I have company as a side dish with whatever else I happen to be making, i.e. steak, chicken or chops. If you're a garlic lover, then just crush the cloves into the beans rather than leaving them whole.

BAKE BEAN SUPREME
This started out as my mothers three bean recipe. However, my husband and I don't like all those beans, so I adapted it into a baked bean recipe. The flavors are so good together, that you will never want beans another way. Their is a lot of leeway with the recipe. You really need to find what works for you.

Steps:
- Brown hamburger and then drain.

- Put baked beans in crockpot (drain for thicker beans, I usually drain one can and not the other).
- Chop up green pepper and add to crock pot.
- Add brown sugar (amount can vary according to taste preference).
- Add bacon and hamburger to crock pot and stir.
- Cook on low for four-six hours.
- Note: if you use high fat hamburger the beans will be runnier. I recommend using lower fat.

BEAN CRUNCHWRAP SUPREME
If you are a fan of the Crunchwrap Supreme from the famous fast food chain then you've come to the right place. Not only can you make it at home for the fraction of the price, the beans are actually present. I always make 4 at a time which is perfect for the can of cheese but wrote this up for 1 serving to suit your individual needs.
