SAUTEED GARDEN FRESH GREEN BEANS
This is a great way to cook fresh green beans. This recipe is very basic, but can easily be jazzed up with some onions, fresh garlic, mushrooms - let your imagination run wild! This recipe also is very good for fresh asparagus.

Steps:
- Heat olive oil in a skillet over medium heat; cook and stir green beans, onion salt, garlic salt, garlic powder, and black pepper together until desired tenderness is reached, 5 to 10 minutes.

PARMESAN-ROASTED GREEN BEANS
Steps:
- Preheat the oven to 400 degrees F.
- Trim off the tough end of the beans and arrange the beans on a nonstick cookie sheet. Drizzle with olive oil season with salt and pepper, to taste. Sprinkle the cheese evenly over the top and bake until the cheese melts and forms a crisp shell over the beans, about 10 minutes. Let the beans sit a few minutes for the cheese to cool slightly. Lift the beans out onto a platter and serve.

- Prepare an ice-water bath. Bring a large pot of water to a boil; add salt. Cook green beans until crisp tender, about 3 minutes. Using a slotted spoon, transfer beans to ice-water bath. Drain; set aside.
- Bring 1/4 cup water and butter to a boil in a large skillet over medium-high heat; add beans. Cook until just heated through; season with salt and pepper.

- In a Dutch oven, heat oil and butter over medium-high heat. Add garlic; cook and stir 45-60 seconds or until golden. Using a slotted spoon, remove garlic from pan; reserve. Steps:
- Bring a large saucepan of water to a boil and salt it. When the water has come to a full boil, put the fettucine into it and cook for 2 1/2 minutes.
- While the pasta is cooking , heat a separate sauté pan to medium high heat and add the cream and a touch of the pasta water. When this is heated add the parmesan cheese, butter and salt to make a sauce, making sure to stir.
- Add the cooked pasta to the sauté pan and toss until it is completely coated with the sauce.
- With a pasta fork, twist the pasta and slide it into a small pasta bowl, using all of the sauce.
- Garnish with the shaved cheese, chervil, olive oil and shave black truffles over the top.

- Blanch green beans in hot water, drain.
- Add green beans to a warmed saute pan which has enough truffle oil and butter (melted) to coat.
- Saute green beans, coating them with the oil and butter.
- Add freshly ground pepper and salt and lightly toss beans while sauteeing.
- Plate the green beans and shave truffles over just before serving.
