FRESH STRAWBERRIES WITH YOGURT (EASY MOROCCAN DESSERT)
A recipe I am posting for ZWT which I found under Moroccan food on About.com. Here is what is stated about the recipe: "When strawberries are in season in Morocco, they might be sliced, mixed with yogurt and sugar, and left to macerate a bit until a creamy, juicy sauce forms. Serve as a light dessert or healthy snack."

- Wash and slice the strawberries. Gently mix the sliced strawberries with the yogurt, sugar and vanilla. Cover, and leave in the fridge for an hour or longer.
- If desired, bring back to room temperature before serving.

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch pan.
- Mix sugar, oil, eggs, and vanilla extract together in a large bowl using an electric mixer until combined. Add flour and baking powder gradually. Stir in yogurt and strawberries. Spread batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 45 minutes.

Steps:
- In a small saucepan, combine lemon juice, butter and sugar. Bring to a boil, stirring constantly. Remove from heat. Cool.
- Place beaten egg yolks in a small bowl. Spoon 2 tablespoons lemon juice mixture into egg yolks, mix well then add back to remaining lemon juice mixture. Return to heat and slowly bring to a boil over medium heat, stirring constantly. Once mixture is boiling, remove from heat and cool.
- In a blender, combine 1/2 cup diced strawberries, sugar and water. Puree until smooth to form sauce.
- Place 2 tablespoons strawberry sauce on each plate. Top with 1/2 cup sliced strawberries and 1 1/2 tablespoons lemon curd.

- In a small bowl, combine flour and nuts. Cut in butter until mixture resembles coarse crumbs. Press into a greased 13x9-in. baking dish. Bake at 300° for 25-30 minutes or until set; cool completely on a wire rack. , For filling, in a small bowl, cream the butter, cream cheese, confectioners' sugar and vanilla until light and fluffy. Spread over crust; cover and chill. , For glaze, 2-3 hours before serving, combine sugar and cornstarch in a small saucepan. Stir in water until smooth. Bring to a boil; cook and stir for 1-2 minutes or until thickened and bubbly. Remove from the heat; stir in gelatin until dissolved. Stir in lemon juice. Cool to lukewarm, stirring occasionally. , Meanwhile, arrange strawberries over filling. Spoon glaze over berries. Chill until serving. Garnish with whipped cream.

- For cannoli cream, in a medium bowl, stir together ricotta cheese, sugar, and vanilla.
- In a small chilled bowl, beat the whipping cream with an electric mixer on medium speed until soft peaks form (do not over-beat.)
- By hand, gently stir the whipped cream and about half of the chocolate pieces into the ricotta mixture. (If desired, mixture can be made up to 2 days ahead; refrigerate, covered.).
- To serve, divide strawberries among 8 dessert dishes.
- Spoon cannoli cream over the berries.
- Sprinkle with remaining chocolate pieces.
