SAUTEED ASPARAGUS WITH BACON

- In a large skillet, cook bacon over medium, stirring occasionally, until browned and crisp, 8 to 10 minutes. With a slotted spoon, transfer to paper towels to drain. Add asparagus to skillet and season with salt and pepper. Cook, stirring, until asparagus is tender, about 10 minutes. Remove from heat and stir in bacon, mustard, and parsley.

STIR-FRIED ASPARAGUS WITH BACON AND CRISPY SHALLOTS

- Combine both vinegars in a medium bowl. Add shallots and let sit, tossing occasionally, 1 hour. Drain and pat dry.
- Meanwhile, cook bacon in a large skillet over medium heat, stirring occasionally, until most of fat is rendered and bacon begins to brown, 5-7 minutes. Transfer to paper towels. Pour off fat; reserve for another use (scrambled eggs!). Wipe out skillet; reserve.
- Fit a medium pot with thermometer and pour in oil to come 2" up sides of pot. Heat over medium-high until thermometer registers 300°F. Whisk flour and cornmeal in a shallow bowl. Dredge shallots in flour mixture, shaking off excess. Fry, tossing occasionally, until golden and crisp, about 3 minutes. Transfer to paper towels; season with salt.
- Heat reserved skillet over medium-high. Swirl remaining 1 Tbsp. oil in pan to coat (this keeps food from sticking); pour out excess. The oil should be shimmering-if it's not hot enough, the asparagus will steam not caramelize. Add asparagus, season with salt, and cook, tossing, until almost cooked through, about 1 minute. Add bacon and 1 Tbsp. water; cook, tossing, until asparagus is cooked through, about 30 seconds. Add soy sauce; toss to coat. Serve topped with shallots.

ASPARAGUS FRIED RICE
We often have fried rice in various guises, either as accompaniment or as a one-dish light meal. In this version, fresh asparagus gives nuttiness and crisp texture that cannot be achieved with the canned product. TIP: 1. It is essential for the cooked rice to be loose-grained. Either pre-wash the rice in cold water to remove the free starch or allow cooked rice to cool to room temperature and then fluff with two-pronged fork. Attempting the latter with unwashed warm rice will result in a sticky mush. Cooking time does not include cooking the rice as this step can be done in advance. 2. A non-stick or seasoned carbon steel wok is most suitable for stir-frying rice. VARIATIONS: 1. Replace the asparagus with chopped mushrooms, fresh peppers, bacon, ham, canned tuna or any other ingredient, or any combination. Also add scrambled raw egg to the rice while constantly stirring in final stages of frying for added flavour. 2. Replace red onion with white, green or spring, or shallots as and when available. 3. Spiciness is varied by adding more or less crushed chillies and using fresh green or red chillies add to colour. 4. Rice can be cooked in any stock of your choice, or add two teaspoonsful of any soup powder mix to the water in which the rice is cooked to achieve subtle variations in taste.

- Trim woody ends of asparagus.
- Heat bacon grease in pan over medium high heat, or electric skillet.
- Add asparagus to pan and cook for about 5-7 minutes, or until bright green and a little browned. Turn frequently.
- Remove and eat at once with a grinding of salt and pepper, or cool to eat with a salad.
- Serve with a squeeze of lemon juice if you wish.
DEEP-FRIED ASPARAGUS

MARMIE'S BACON, GARLIC ASPARAGUS
I was looking for a fast way to prepare my asparagus, I was getting tired of steamed....So I put this together. Although this certainly is not as fat free as steamed, it is truly much more flavorful. It turned out so delicious that I was sad that I had not cooked larger portions, I loved the crispy, sweet garlic. NOTE: (The directions look really long but are only detailed not difficult.) I hope you enjoy this super easy recipe.

- Fry bacon medium crisp in frying pan on med heat.
- Remove bacon, chop coarsley and set aside - reserving bacon fat in pan.
- Place 2 crushed cloves of garlic in pan and fry untill tender but not browned.
- Meanwhile - To prepare asparagus for cooking:
- Wash,.
- Hold bottom end of asparagus in right finger tips, the other hand will hold asparagus in about the middle and bend to 'snap' off ends where they naturally break to get rid of the tough ends. Discard ends.
- With a potatoe peeler and gently peel tough outer layer away from cleaned asparagus.
- Place in frying pan with the partly cooked garlic and cook untill tender crisp - about 5 minutes. Watch that the garlic does not burn, what you are looking for is a gentle crispy golden color.
- Sprinkle asparagus with chopped bacon and parmesan salt and pepper -topping with the crispy garlic from the pan. - serve immediately.
