GARLIC ROASTED POTATOES

Ina Garten's Garlic-Roasted Potatoes from Food Network's Barefoot Contessa make the perfect classic side dish for any meal.

Garlic Roasted Potatoes image

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.
  • Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.

3 pounds small red or white potatoes
1/4 cup good olive oil
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons minced garlic (6 cloves)
2 tablespoons minced fresh parsley

Steps:

  • Place the garlic in a small saucepan filled with cold water and bring to a simmer. Simmer for 30 seconds, then drain and return to the same pan and cover with cold water again. Bring to a simmer and drain again. Return the drained cloves to the pan and add the olive oil. Bring to a gentle simmer and cook for 12 to 15 minutes, stirring frequently.
  • Puree the mixture in a blender for 2 minutes, or until the mixture is very smooth, scraping down the sides of the blender as necessary. Add the salt at the end of blending.
  • Use as an addition to soups, salad dressings or any dish calling for garlic.

OIL-POACHED-GARLIC PUREE AND ROASTED-GARLIC OIL

This process for preparing garlic yields two culinary treasures; a rich-tasting puree that can be enjoyed on it's own or used as a cooking ingredient as well as an infused oil. Oil-Poached-Garlic Puree and Roasted-Garlic Oil image

Steps:

  • Bring 4 cups of water to boil in a medium saucepan.
  • Remove from the heat, add the separated but unpeeled cloves of 4 heads of garlic, stir to submerge the cloves, cover and let sit until the garlic skins are softened and cool enough to handle, about 50 minutes.
  • Strain the garlic, discarding the water, remove the skins and cut off the hard nub where the clove was attached to the head.
  • Place the garlic, canola oil and EVOO in a medium saucepan; bring to a gentle simmer over medium-low heat.
  • Reduce the heat to low and maintain a very gentle simmer (it may be necessary to slide the pan to the edge of the burner). Simmer until the cloves are golden and very soft when pressed with a fork, 40 to 50 minutes. Let cool for 30 minutes.
  • Transfer the cooled garlic to a sieve to drain, reserving the oil. Transfer the garlic to a food processor and puree until smooth, scraping down the sides occasionally. Store the puree and the oil separately in the refrigerator.
  • NOTE: makes 1/2 to 2/3 cup puree (depending on the size of the garlic) and 2 cups garlic-infused oil.

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut aluminum foil into 3 6-inch squares (large enough to wrap each garlic head). Place 2 teaspoons of butter in each square of foil and place one garlic head into each square of foil. Fold the packets up, and arrange them in a 9 inch pie pan.

  • Preheat oven to 400 degrees. Using a serrated knife, slice off top quarter of garlic heads, exposing as many cloves as possible. Arrange garlic heads, cut side up, in an 8- or 9-inch square baking dish (make sure garlic heads sit flat).
  • Season garlic with salt and pepper and sprinkle with thyme. Slowly pour oil over each head, letting it soak into and around cloves. Cover dish tightly with foil and roast until cloves are golden, completely soft, and begin to protrude slightly from skins, about 1 hour. Let stand until cool enough to handle.
  • From the bottom up, squeeze each head to push out cloves (peel skins from any completely enclosed cloves). Transfer garlic and cooking oil to an airtight container. (Garlic will keep, refrigerated, up to 2 weeks.)

We want to be sure each clove is exposed. You may need to peel off some of the outer papery material to see better. If necessary, use a paring knife to cut off the tops of the cloves on the sides. Repeat for additional heads of garlic, if needed.
  • Place the garlic bulb(s) in an oven-safe stainless steel saucepan or skillet with an oven-safe lid*, with a base wide enough that the bulbs don’t touch the sides. Drizzle each bulb with 1 to 2 teaspoons of oil, enough to coat the exposed tops. You might need to use your fingers to rub oil that reaches the bottom of the pan back onto the tops.
  • Cover your pan and bake for 40 to 70 minutes, checking every 10 minutes after 40 minutes is up (be careful, the pot will be very hot!). The heads are done when they’re nicely golden on top and the cloves are soft enough to easily pierce through with a paring knife. (For greater depth of flavor, roast 5 to 10 minutes longer, but watch out for signs of burning—an acrid smell, or blackened bits).
  • Let the roasted garlic cool for at least 10 minutes, or until you can safely handle it. To release the cloves, use a fork (cocktail fork if you have one) or grapefruit spoon or just gently squeeze them from the base (I find this easiest for the inner cloves).
