SPANISH GARLIC SHRIMP (GAMBAS AL AJILLO)

- Slice garlic thinly. Season shrimp with kosher salt and paprika. Mix to coat.
- Heat garlic and oil in a skillet over medium heat. Cook until garlic starts to turn golden, about 2 minutes. Add shrimp and increase heat to high. Toss and turn shrimp with tongs until starting to curl but still undercooked, about 2 minutes. Pour in sherry. Cook, stirring continuously, until sauce comes up to a boil and shrimp is cooked through, about 1 minute more. Remove from heat. Stir in parsley with a spoon.

- In a big ol' skillet, heat the oil over a medium fire til it's hot. Add the garlic and cook til golden. Add the red pepper flakes and the shrimp. Stir and mix for about 1 minute til them shrimp are nice and pink. Now, sprinkle the shrimp with the paprika and keep stirring for about another half minute. Add the sherry. Let that cook for another half minute. Add the lemon juice and season with the salt and pepper, give it a stir and transfer to a big ol' bowl. Sprinkle with the fresh parsley. YUM!
