  • Place butter, cabbage, apples, and sugar into a large pot. Pour in the vinegar and water, and season with salt, pepper, and clove.
  • Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer until the cabbage is tender, 1 1/2 to 2 hours.

  • In a large Dutch oven coated with cooking spray, cook and stir onion and apple over medium heat until onion is tender, about 5 minutes. Stir in remaining ingredients; cook, covered, until cabbage is tender, about 1 hour, stirring occasionally. Serve warm or cold.

German Meatballs with Red Cabbage image

Steps:

  • 1. For meatballs, mix first 9 ingredients in bowl.
  • 2. Shape into 16 meatballs.
  • 3. Cook bacon in a large skillet until crisp.
  • 4. Remove bacon with slotted spoon and set aside.
  • 5. Brown meatballs in bacon drippings until browned on all sides.
  • 6. Remove to a warm platter.
  • 7. Add remaining ingredients to pan.
  • 8. Heat to a boil, stirring frequently.
  • 9. Add meatballs.
  • 10. Simmer, covered for 30 minutes.
  • 11. Spoon into serving bowls; sprinkle with reserved bacon.

1.5 lb lean ground chuck
1 egg, beaten
3/4 c apples, finely chopped
1/2 c bread crumbs
1/4 c fresh sauerkraut
2 Tbsp grated onion
1 tsp salt
1/2 tsp marjoram

GERMAN ROTKOHL - SPICED RED CABBAGE WITH APPLES AND WINE

Our family favorite Rotkohl dish, in the traditional German style (with a few flourishes)! Delicious!! Red cabbage, apples, aromatic spices and wine---this dish is sure to please! Wonderful served with holiday roast turkey, beef, or ham dishes -or- with bratwurst, weisswurst or wienerwurst sausages. Tip: For a delicious & traditional European feast serve the Rotkohl with German Meatballs recipe #106298, Beef Rouladen recipe #344842, Bavarian Sauerbraten recipe #409947, Wiener Schnitzel recipe #459188, or Swedish Meatballs, along with boiled new potatoes or buttered spaetzle noodles sprinkled with fresh snipped parsley. I like to make two batches at a time, one for now and one to freeze for future meals. I hope you enjoy as much as we do. German Rotkohl - Spiced Red Cabbage With Apples and Wine image

Steps:

  • Cook the pork fat or bacon in a large skillet or dutch oven over low heat, stirring occasionally until it has rendered its fat, about 20 minutes for the pork fat or 10 minutes for the bacon.
  • Add the onion, ginger, and cinnamon stick, increase the heat to medium, and cook, stirring occasionally for about 5 minutes, until the onion has softened.
  • Add the cabbage, stirring and cooking over medium heat until some of the bits are slightly browned and caramelized, about 10 minutes (I do this in batches). Note: You can skip the browning step if you are in a hurry, but I find that it adds a particularly wonderful caramelized flavor to the finished dish. Now add the marjoram, garam masala, vinegar, and port or Madeira, and stir well. (Note: At this point add the optional bay leaf, whole clove, and chopped apple).
  • Reduce heat to medium-low, cover, and simmer for 1 to 1 1/4 hours, stirring occasionally to make sure the cabbage is not sticking to the bottom of the pan.
  • Remove the lid and cook, stirring frequently, for 15 minutes.
  • Stir in the brown sugar (or maple syrup) and cook for 15 minutes longer, or until most of the liquid has cooked away.
  • Remove the cinnamon stick and bay leaf before serving.
  • NOTE: If you can't find garam masala, use just a small dash each of ground black pepper, rock salt, cinnamon, & cardomom.

  • In bowl, mix throughly beef, bread crumbs, egg, 1/4 tsp caraway and salt.
  • Shape into 16 meatballs.
  • In skillet, brown meatballs in the shortening, pour off fat.
  • Blend soup, water, cream cheese and remaining caraway, add to skillet. Add celery and carrot to skillet.
  • Cover and cook over low heat 5 minute.

  • In a large bowl, combine the egg, 1/2 cup milk, Worcestershire sauce, shredded potatoes, onion, salt, nutmeg, ginger, allspice and pepper. Crumble beef over mixture and mix well.   • Add the ground meat, diced onion, cracked egg, breadcrumbs, mustard, paprika, salt, and pepper to a bowl.
  • Mix everything together for a few minutes with your clean hands until the ingredients are thoroughly mixed and stay together when you form a rough ball in your hand. The consistency is important to stop the meatballs from falling apart later. If the mixture feels too wet/sticky, add a few more breadcrumbs.
  • Form approximately 8 meatballs that are slightly smaller than the size of your palm. Slightly flatten off the top and the bottom of the meatball so that they are not a fully rounded ball. Make sure that the meatballs are roughly the same size so that they'll be done frying at the same time.
